We are planning to make an enormous batch of homemade frozen burritos before LO arrives. Cheap tortillas (Costco) filled with slow-cooker beans, and red rice and salsa from one of DH's favorite Mexican cookbooks. There are some amazing salsas in there. I like these because they're versatile enough to grab and heat up for just me during the day, or to serve as a full meal for both of us.

Black bean soup and pork carnitas were the favorites that I made. My friend gave me the Pioneer Woman's lasagna roll ups which were really good. I also made a ton of muffins. Ahealthysliceoflife and pinchofyum are 2 blogs I got a lot of recipes from.

For me, I preferred to have stuff on hand for when it was just me, not so much dinner ideas. I did individual soups, muffins, mini pot pies, ect. things I could easily heat up for breakfast/lunch. For dinners, I utilized my crockpot. Dump and go about my day and dinner was done with DH got home!

I used this website, which has tons of freezer meal ideas for all sorts of preferences (diet, paleo, vegetarian, comfort food, etc): http://onceamonthmeals.com/
I also made big batches of rice, froze them in 2-cup portions and bought an assortment of easy-prep frozen meals at Trader Joe's and Costco, like stir-fries, tamales, etc. Paired w/ rice and salad.

I loved having individual sized things, especially sort of healthy muffins (ha with chocolate chips). Nice to grab them when I wanted something quick.

My husband made and froze a ton of Batali bolognese sauce as well as green curry chicken (links below). All we had to do was defrost and then make either rice or pasta. Nom nom nom.

I'm trying to make some things ahead of time for after baby #2 comes..but I'm REALLY picky!

throw me some ideas for freezer meals. I'm going to make some red sauce ahead of time, a chicken casserole (that can be frozen, yes? lol - cooked then frozen??)

I'm so not great at cooking.
