We make salty potatoes. Boil them in a pot of really salted water, Kosher salt only. The potatoes absorb the salt while they cook. Then I put a little melted butter over them when we eat.
Do these all the time with seafood.

I also like to roast them like others have mentioned, sometimes I use a packet of lipton's onion soup mix in place of salt and other seasonings.

Lately I've been cutting them into cubes and steaming them, I add a little butter, and lots of herbs and salt. Yummy

I only buy red skins because you don't have to peel them. (Am so lazy). They make amazing mashed potatoes. Also like to roast them. :)

I like using them for red potato salad.

Cut potatoes into cubes and boil them until they're tender. Mix with mayo, sour cream, bacon bits, and dill weed. My mom also puts green onion in hers but I usually skip it. Mix it all together and you're done! I like mine on the warm side but my dad likes it chilled. It's really up to you. It's so easy and delicious.

You can also cube the potatoes, coat with a little olive oil, and mix with a packet of Lipton's french onion soup mix. Super easy side dish!

DH puts them on skewers with olive oil, salt and pepper on the grill - yum!

Sometimes I cut them up in forths, put olive oil on them and sprinkle a dry packet of ranch over them - then cook for 45 minutes at 400 degrees! So good.

@rahlyrah: I just halve or quarter them, toss them in olive oil, sprinkle on some spices that I feel like that day--sometimes I do spicy, like "kickin chicken", sometimes I do garlic powder and rosemary, sometimes I sprinkle on a Ranch dressing powder packet, then cook them in a pyrex pan (they don't stick as much in pyrex). Leave the skins on and bake on high, like 400, until crispy/cooked through.

@rahlyrah: Yup, just half them! If you don't have as much time to cook, you can quarter them up. Makes the roasting time shorter! And cover it with foil for about 25 minutes (to make them cook through better) and then remove the foil for the remainder of the time for that yummy crispy texture.

OK this is similar to what sugar biscuit said.

This is my favorite way to cook potatoes... SO delicious!!

So cut the potatoes into slices. Not too thin, but not big chunks either. (you can do cubes, but you just need to bake it a little longer)
Spread them out in a dish in a single layer. Cover them with olive oil. Season with rosemary (this is key), garlic, and salt and pepper. Cook in the oven at 400 or 425 for about 40 minutes. The high heat combined with the olive oil will make them CRISPY on the outside and around the edges but still really soft and delicious when you bite into them.

P.S. Make sure you stir them a couple times while they're cooking to make sure it is all coated with olive oil.

I am trying to expand my side dish repertoire. Usually, when I make potatoes I stick with mashed yukon golds. This time around, I bought a bag of red skin potatoes.

Sadly, I have no idea how to make them! I've seen you can use a skillet, boil, bake, roast, etc., but which is best?

Can you please share your favorite method?
