I find sometimes if I am at a complete loss, I'll throw leftovers from the night before on the table and she is thrilled. Like @gingerbee, we do fried rice for breakfast, as well!

@gingerbebe: I just had fried rice for breakfast based on your suggestion and it was awesome! I think I may make a huge batch for the family for this week. My kids love rice and eggs and who doesn't love ham or bacon? Great idea!

My girls are obsessed with oatmeal right now. I make a big pot and then use that for a few days as it keeps well in the fridge. The girls are obsessed with pomegranates and blueberries on top which I buy from costco. Sometimes we add walnuts too. We usually put a little brown sugar on top as well.

I usually make mini muffins and then freeze them. I try to do fruit or veggie ones. The favs are zucchini with mini chocolate chips, or blueberry raspberry. Sometimes I do a zucchini/apple/carrot which they also like

We do a lot of fruit and yogurt parfaits with different toppings. Otherwise, it's mostly the things already discussed here...oatmeal, frozen pancakes, muffins, frittatas, cereal, quiche, etc with cinnamon rolls or kolaches on weekends.

Yogurt, hard boiled eggs, and dried cereal are all I can manage to make DD right now. When I'm not sick I scramble or fry eggs quite a bit and slice up some fruit. DD also loves grits, bacon, bagels, and muffins. A bowl of grits with some scrambled eggs mixed in topped with cheese is her favorite.

@Bao: Olivia refuses to touch these with a 10 foot pole, but Charlotte loves them. My mom had them at her house and was eating them and she started begging (sounds like I'm talking about a dog..) so I buy them now! They have the normal quantity box at Target. About 5.99.

I often fry an egg in a small pan -- it takes like a minute to cook -- put it on a small tortilla, and fold it in half. We have a gas stove so we just grill the tortilla on the flame quickly. It is super fast, pretty tasty and easy to clean up.

My son usually has that, yogurt with fruit, or (most often) Cheerios for breakfast. On weekends sometimes we make pancakes or more involved egg dishes.

DS has recently shown an interest in barely toasted pb sandwiches (warning, if the bread is too warm the pb turns runny!). Since he's allergic to milk, most standard breakfast things are out, but he'll eat tons of dry cereal and juice some mornings :)

DS1 has been on a smoothie kick. We also do Greek yogurt with rainbow sprinkles, ham omelet with ketchup to dip, cereal and milk, and pancakes (although he mostly eats like one bite of pancake and just goes for the turkey sausage). Sometimes I also do breakfast fried rice - rice fried up with an egg and some chopped ham, bacon, or sausage, with some ketchup drizzled on top.

We do cereal, PBJ toast or a waffle usually. Sometimes he gets on oatmeal kicks. Usually fruit of some sort too - berries or a banana. He really just prefers cereal most of the time, so that's fine since we get pretty healthy/boring ones.

My picky toddler and daycare toddler have really been loving oatmeal lately. So it's on the menu 3 mornings a week. Takes about 5 minutes to boil.

Rolled oats, water, a couple of apricots, a prune or date, hemp hearts, cinnamon, and water. I boil and stir for 5 minutes tops and blend with a stick blender. Cool for a few minutes and serve. They need their food fast too!

Our other quick breakfast is smoothies. They're kind of picky about breakfast food.

We do a lot of plain oatmeal. I mostly microwave it with water and then add some frozen blueberries or whatever frozen fruit is in the freezer, which cools it down. Top with a little milk or cream, if we've got any.

If I'm really on top of things, I make Bircher muesli the night before. The quick version of this is to get some packaged muesli and mix it with plain yogurt, but packaged muesli is pretty expensive and the kind I like best--Alpen--has some sugar that is not from the fruit.

LO also really likes a banana and peanut/almond butter.
