I ended up swapping the hash brown cassorole with a crustless quiche - I did an "italian" style w/ mozzella and pesto and one with Mexican blend cheese and green and red peppers. And everyone raved about the French toast! The recipe I used had a caramel bottom. You have quite a bit of carb items so i think it'd be okay to switch it out.
