I agree with the crustless quiche or frittata or spanish tortilla! So yummy!
It would also be nice to have a fruit or berry salad or regular salad too.
And if you want to offer something sweet - I drooled over this recipe when I was gf for breastfeeding. I've made the crust and used it for other pies and it's really good! http://www.thekitchn.com/recipe-gluten-free-pear-tart-with-walnut-frangipane-dessert-recipes-from-the-kitchn-211667

Definitely concur on the crustless quiche- I make them in muffin cups and they freeze extremely well, so they will make awesome weekday breakfasts if you have leftover.

Crustless quiche! Butter well an eight inch glass baking dish, fill with sautéed vegetables and grated cheese, pour in after beating: 4 eggs, 1/2 cup heavy cream, heavy pinch of salt, half a teaspoon of mustard powder, pepper, dashboard cayenne. Bake at 400 for 40-50 minutes.

Oatmeal bar! Get some certified GF steel cut oats, cook a ton in the crockpot. Lay out a bunch of luxe toppings laid and serve with fruit salad and coffee.

@Jess1483: I don't really follow a recipe! Shit ton of eggs, some milk to thin out, pre sauté the veggies, add them in, salt, pepper, lots of cheese. I like to bake them in silicone muffin cups. Individual portions. :) Bake for 20-25 minutes. I think 350?

This was the very first quiche I made - substitute vegetables as you wish. :)

If you're looking for an easy serve-yourself option, it might be fun to do a greek yogurt bar - with plain/vanilla yogurt, then add-in options of berries, fruit, nuts, chocolate chips, granola, etc.

@regberadaisy: @psw27: I have asked and am waiting for an answer, but I do not think she is vegan. In fact, now that I think about it, we've shared fondue before, so she must not be vegan.

I'm actually a decent cook, but I've never really made a quiche or frittata. Do either of you have a recipe?

Ooh, potatoes. Good plan.

Well, eggs of course - as long as she isn't vegan. You could make a frittata with loads of yummy fresh veggies in it. Plus breakfast potatoes.

I'm having a few ladies over for brunch this weekend. One of them is vegetarian and also generally gluten free. It's a low-key brunch, but I want to make sure that everyone has something filling to eat. Suggestions? Favorite dishes?

One thought I had was a waffle bar with various toppings (with gluten-free waffles)?
