I would ask. My mom is diabetic and much prefers a tiny slice of something with sugar to something that is sugar free.

Cookie cakes are always a yummy alternative.
I found this recipe that could work.
https://www.sugarfreemom.com/recipes/sugar-free-chocolate-chip-cookie-pie/

We also have a local shop that specializes in Sugarfree and gluten free options. You could probably browse their online store for some inspiration.

Strawberries stuffed with marscapone & honey is festive.Just not sure how diabetic friendly it is. A granola- yogurt- fruit parfait could be another option.

Definitely ask. My SIL was okay with an almond cake made with spenda. For my grandpa I'd make berries with whipped cream. We used very little sugar in it (if any,I honestly think there wasn't any in there). It was delicious.

So I would just ask her what she would like. My husband is type 2 and the sugar free stuff isn’t really cool for a lot of reasons ...he honestly just likes fruit. I made strawberry shortcakes before with an almond flour recipe that had no sugar, fake or otherwise and that was great. Some diabetics are okay with occasional indulgences and some are not. Just ask.

Sugar free is fine. That's what I would go with as she won't have to do anything special to enjoy a piece

ETA you also have to be careful of carbs but most diabetics can indulge for special occasion

My MIL is diabetic (I think type 2 but honestly I'm not sure as she doesn't really talk about it openly) and will be at our house for her birthday over Memorial Day weekend. I want to get some sort of celebratory treat but I'm unclear on what specifically she would be able to enjoy treat-wise. My husband is clueless and it never occurred to him that maybe we'd have to get something out of the ordinary for her. I know I've seen her eat sugar-free desserts (like an apple pie prepared with Splenda) so maybe that is the route to go. Let's be real... I'll probably order something but don't really even know what to ask for. Am I good getting something with an artificial sweetener or is that just as bad from a glycemic index standpoint?
