I also have a shun pairing that I use often and an off brand bread knife that gets a lot of use.

<description>&#60;p&#62;I think a store like WS is great to test out all the different brands and see which ones work best for you. But I would not buy from them because they're expensive!&#60;br /&#62;
We got our starter Wusthof Classic of Overstock of all places. And we have built on it through the years through our wedding registry, Macy's clearance aisle and once in a while home goods!&#60;/p&#62;
&#60;p&#62;Keep in mind though each brand has a different line and some lines are better than others.&#60;/p&#62;
&#60;p&#62;Personally we have used Wusthof, Global &#38;amp; JA Henckels and we vastly prefer Wusthof.&#60;/p&#62;

<description>&#60;p&#62;Globals, Wusthof, and Shun are great knives. Wusthof tend to be forged meaning that they're a solid piece. Globals are beautifully light and weighted nicely. You really only need a good 8 inch knife, bread knife, and paring knives to be appropriately stocked. I would recommend getting plastic sheaths for knives instead of a block.

<description>&#60;p&#62;We have both Shun and Wusthof knives, and I would say that I love my shun blade much more than the wusthof as it just seems has a cleaner cut IMO. But as others have suggested try to go in somewhere like Williams Sonoma so you can try holding the knives etc. that way you will know if a knife is too heavy or too light for your taste before you buy it. Shun also has a free lifetime sharpening program where you just pay for shipping and they will sharpen your knives for you too which has come in handy for us. If you are going to buy a good blade make sure you also have a good cutting board as well as think about sharpening it so it can last. :)

We have a great 8&#34; chef knife, santoku knife, and bread knife (Wusthof and JA Henckels) and we've been really happy with them.&#60;br /&#62;
We also received this set for our wedding. We use it a bit, but a single paring knife would work just as well.&#60;br /&#62;

I really suggest going into a kitchenware store and asking to hold their knives. I used to work at one, and some of the higher-end knives just didn't sit comfortably in my hand. The weight felt unbalanced.
