Day old spaghetti is simple, but impressive. Caesar Salad with cracked black pepper and shaved p armes an can make a good looking presentation. Or mushroom stuffed ravioli with a creamy marmalade sauce bubbled to perfection just before they arrive.

I made chicken enchilada soup in the crockpot for a family get together, and it went over really well. Three people asked for the recipe!
http://www.thekitchn.com/slow-cooker-recipe-chicken-enchilada-soup-recipes-from-the-kitchn-193675

I'd recommend doubling it. Rather than stir in heavy cream, I just served it with sour cream. I also suggest avocado or tortilla chips on top.

If you want to try something a bit more exotic and super healthy I recently made this amazing Thai chicken curry and it was very easy. Yum http://www.foodnetwork.com/recipes/melissa-darabian/easy-chicken-curry-with-vegetables-recipe.html

I have an amazing recipe for Swedish Meatballs. They look "fancy" but are really easy to make.

Are you trying to impress with looks, or taste, or both?

@Leialou: What recipe did you use in the crockpot??

@Mae: Hmmm lasagna may be a winner.

Also, my FIL is on a diet so we try to keep things on the leaner side. It makes most casserole type things kind of difficult =/

We're having a family game night at our house Friday night. It will be DH and I (and our kiddos) plus FIL, 2 BILs and BIL's gf who is meeting the family for the first time. I have an appt in the late afternoon so I need a dinner that I can make ahead of time and either cook all day in the crockpot or toss in the oven when I get home. I also kind of want to impress this new gf lol. I'm drawing a blank. Help!

P.S. Pulled pork is out and so is chili..we've had those for family nights recently.

Thanks!
