<description>&#60;p&#62;I have seen articles online about baking mini frittatas/omelets in muffin pans.  They can be kept in the fridge (or in some cases frozen) and eaten throughout the week.  When I make eggs, I often use two egg whites per yolk so that they still taste eggy but have fewer calories and cholesterol.&#60;/p&#62;
&#60;p&#62;Along the same lines, you could also look for some healthy muffin recipes.  I recently found an Alton Brown banana bread recipe that uses oatmeal flour.  It has a lot of butter but I have been meaning to try it again but substitute apple sauce for some or all of the butter.  If I keep tweaking I might wind up with a healthy version of it!&#60;/p&#62;
&#60;p&#62;Mini muffin tins would make more sense since you can eat them in a few bites which would be less messy in the car.  Just throw a few into a baggie or tupperware.&#60;/p&#62;
&#60;p&#62;Also, fyi, when I read this thread I thought it was titled &#34;Cat friendly breakfast ideas&#34;.  Meow!
