<description>&#60;p&#62;I don't have a recipe, but I do it pretty easily--toss carrots in olive oil, salt, pepper, and either rosemary/other herbs or cumin (depending on what flavor you want), and pop them in the oven until they're soft and a little blackened. Yum! I always hated cooked carrots until my friend's mom made them roasted with cumin--roasted is def my favorite way to go!
