@Mrs. Champagne: that actually might be a really great idea. I'll run it past my husband!!

@mediagirl: I don't eat fish but my ILs love seafood. Their traditional Xmas meal is crab legs. They do that Christmas Day so I don't want to do it on Xmas Eve! But a pasta with separate toppings would work out great.

@Mrs. Jump Rope: how about fish? There is a traditional Christmas Eve dinner of 7 fishes - you could incorporate something like salmon with a fish or shrimp stuffing. The stuffing can be made ahead of time (and just put on top of the salmon when baking, doesn't need to be "stuffed." Salmon doesn't take long to bake at all.

Do you eat fish (since you don't eat meat...I wasn't sure)? You could also do a fettucini and put shrimp or scallops into the pasta for those who do eat fish and you could have it without?

Why not crock pot a roast or something? Easy to not have to worry about that cooking while you prep other sides (potatoes, veggies, etc)

could you do something fun like make your own pizza? you provide all the toppings and then you can all mix and match and make a few? or do you want something more traditional?

I need some ideas on what to make for Christmas Eve dinner. We will be inviting my ILs over and DH has to work that day.

I don't eat meat (but will serve it for others). DH has rules out a ham and chicken parm.

Ideas for what to serve? Looking for something relatively easy since I don't cook meat often and will likely be flying solo on meal prep/cooking!
