Do a chickpea curry with the chickpeas and tomato sauce: http://www.marthastewart.com/313994/quick-chickpea-curry

Broccoli, eggs, and cheese would be good for broccoli nuggets as posted here. I can't wait to make that recipe one of these days.

@cmomma17: For the quiche, I just sautee the veggies and then blot them with a paper towel to get the extra oil off. Then, I beat the eggs seprately with a bit of milk, water or cream (depending on what I have) and then I mix in the cheese.

I sometimes do a crustless version, where I just put the veggies in a buttered ceramic dish, then pour the egg/cheese mixture on top.

I do a frittata as well, but I cheat and cook it on the stove and finish it in the oven, because I can't seem to flip it cleanly.

@looch: any quiche tips? I've never made one. I've thought about trying a frittata too.

Hmm...I have no idea for the eggs (for some reason, I'm just not creative with eggs) but have a great idea if you have pasta!

Saute some garlic and the red onion in the olive oil (make sure not to burn it). Steam your broccoli and throw it in with the olive oil mixture along with the grape tomatoes. Cook just long enough to get them a tad softer. Cook your pasta separately and then coat it with your olive oil/veggie "sauce"!

I would probably make a quiche for dinner with 4 eggs, then freeze the other 6 in 2 egg portions.

Need to do some meal planning before grocery shopping tomorrow morning. I'd love to clean out my pantry!

I have some broccoli, grape tomatoes, half a red onion, and 10 eggs to use up ASAP. Plus three cans of beans (butter, chickpeas, and northern), one can of tomato sauce, and rice (both brown and white).

Any ideas? Tons of spices, olive oil and garlic too.
