Honestly, cold chicken just doesn't sounds very appealing. I imagine costco has chicken nuggets or skewers that you can pop in the over before the party and then keep warm in chafing dish. For chicken marinade I've had very good luck in store bought ready made marinades (in the salad dressing aisle.)

My favorite is to marinate chicken breasts in a ziplock bag with 2 tablespoons olive oil, juice of 1 lemon & 3-4 garlic cloves, salt & pepper. Marinate in fridge for at least 1 hour.

I grill the breasts whole and slice up. It is very juicy and no overpowering taste so good with a dip, and I enjoy cold the rest of the week on salads.

My daughter requested chicken nuggets for her birthday party. I don't want to spend $70 on Chick Fil A nuggets, so I'm searching for a good chicken recipe instead. I don't want to have to cook anything during the party or right before the party. I think I'd like to do chicken skewers. I need a good marinade for the chicken.

Suggestions? Any tried and true chicken marinade recipes that would make the chicken taste good cold? I'll serve ketchup and ranch on the side for dipping.
