How about salad without lettuce? I like to spiralize zucchini and carrots, then toss with sesame dressing. It’s like healthy fresh lo mein!

@Ms. RV: I’ve only ever had quinoa at room temp or cold and I like it. You can always bring your dressing on the side to keep whatever veggies are in there crisp.

@jennlin821: I used to bring a salad kit four days of the week and eat at the cafeteria once a week. Now I can't even look at lettuce so that is why I am so thrown. I actually have a thermos and used that before I had kids. Now mornings are too hectic to reliably heat something up to put in a thermos (I solo in the mornings).

@PurplePeony: Thanks for the recommendation!!

@Ms. RV: I think it’s fine but I always add dressing or sauce because I find it gets a little dry without.

It sounds like you currently eat lunch out right now? I find that when I need to change a habit, I try to make it as similar as possible. So what is it you normally get for lunch?

Also, I absolutely HATE it when a sandwich gets soggy, so instead of making the sandwich at home, I bring the bread/wrap and put the filling in a Pyrex then assemble at work.

Would you consider investing in a thermos, so that you could take warm items?
Also, try some typically warm foods cold. My husband likes cold spaghetti & marinara, and cold shepherds pie.

@Mrs. Lemon-Lime: @muffinsmuffins: How do rice and quinoa taste cold?

@DesertDreams88: Another microwave would get just as dirty as the current ones, unfortunately. Part of the issue is I work in a factory and there is just dirt everywhere. I don't even use the fridges because they are yucky.

@lindseykaye: I love the caprese and greek ideas!!!

@mrsbookworm: That is a really good idea to roast veggies. Especially now that things will be coming into season. Mmm... roasted homegrown tomatoes.

Sometimes I Roast a bunch of veggies on Sunday and then add them to things through the week. For ex:
-in a wrap with hummus
-over cold pasta with vinaigrette
-over lettuce
-throw them in a frittata and slice it up

Caprese style sald with mozzarella pearls, halved cherry tomatoes, balsamic and/or pesto, and if desired some grilled chicken for protein.

Greek style pita with either grilled chicken or turkey meatballs, hummus, yogurt/tzatsiki, red onion, and cucumbers.

Pasta salads? My fave has a short pasta (bowtie, penne, spiral) with chunks of mozzarella, diced red bell pepper, scallions, cubed grilled chicken, cherry tomatoes and a pesto/italian vinaigrette dressing.

I also like this other cold pasta dish that has spaghetti/linguine with grilled chicken, broccoli florets, shredded carrot, and scallions in a peanut sesame dressing.

What about buying a microwave or toaster oven on sale or through OfferUp / FB Marketplace, and donating that to the work lounge? That's what I did.

DW would often take snack plates: cut fruit, crackers, cheese, salami or other chunks of meat if she could stomach it, hummus or guac or salsa with tortilla chips and cut veg, granola bars or trail mix, yogurt. You could also do burrito bowls without meat: quinoa or rice, roasted veggies, black beans, salsa and sour cream/guac. Can add spinach or greens too and that often keeps me full a long while.

Quinoa salad and wild rice salads...all kinds of scrumptious recipes. One I recently tried called for chickpeas, sweet potatoes, and a little maple syrup.

Cheese quesadilla on whole wheat or spinach tortilla. Just microwave at home to melt and cut into wedges. I happen to like those at room temperature.

In an effort to save money/not over gain this pregnancy, I am trying to pack my lunch for work four days per week. I need ideas. It has to be cold (microwaves at work are disgusting) and I have food aversions to lettuce and chicken salad. Rather not eat lunch meat due to all the sodium.

Here is what I have come up with so far:
-Cut up fruit and cottage cheese
-Veggies and hummus or guac
-Pasta salad
-Home-roasted turkey or chicken sandwiches
-Leftover turkey loaf sandwiches
-PB&J
-Tuna salad

Any other suggestions?
