&#60;p&#62;1 box pasta&#60;br /&#62;
Lots of veggies diced, usually, carrots, celery, 1 yellow pepper, lots of grape tomatoes halved, whatever.&#60;br /&#62;
I small jar pimento studded olives, halved&#60;br /&#62;
Pepperoni, cut into quarters&#60;br /&#62;
1/2 jar Kens Italian Dressing (original)&#60;br /&#62;
1 small jar of pesto (to taste)&#60;/p&#62;
&#60;p&#62;Add whatever else you like. Maybe some cubed cheese like feta

<description>&#60;p&#62;I make a roasted veggie pasta salad - just whatever summer veggies you like (I usually do bell pepper, zucchini and/or yellow squash, and cherry tomatoes) cut into bite-size pieces and roasted in the oven (you could also saute or even leave raw). Toss with whatever cooked pasta you like (i generally do orecchiette), a bottle of red wine vinaigrette, and some chopped basil. I usually do crumbled goat cheese added at the very end (once salad is already cold) but if you're really worried about the temperature, you could add some shredded parmesan instead.

<description>&#60;p&#62;Pasta tossed with chopped tomatoes (its faster to chop Roma tomatoes than halve cherry tomatoes and  you don't have the choke hazard), shredded mozzarella (I like using small pearl mozzarella for adults, but with kids, why risk it?), and store bought pesto.  I like adding a squeeze of lemon or red wine vinegar for a little zing and extra grated Parmesan.  I like this with orzo usually, but with toddlers, it may be easier to use a pasta shape that's easy to pick up with hands or forks depending on their dexterity.  For my boys, ages 1 and almost 3, the best shapes I can use for both are wagon wheels, orecchiette, or campanelle.  They are easy to stab or pick up and can be popped into their mouths in 1 bite.  &#60;/p&#62;
&#60;p&#62;You can also make a creamy avocado based dressing and toss it with pasta, chopped tomatoes, and cucumbers and keep it easy peasy.  I might change up the cilantro with parsley or mint if you think people might not dig cilantro.  If you want protein, you could cube up some rotisserie chicken or chop a ham steak.&#60;/p&#62;

&#60;p&#62;I grate my veggies for pasta salad so I don't have to chop.  I use zucchini, carrot and sometimes yellow squash for color.  Then I halve grape tomatoes and toss it with bowtie pasta, pesto and black olives.  If I am feeling it, I add those tiny mozzarella balls.&#60;/p&#62;
&#60;p&#62;Or you can do an antipasto style pasta salad: oil and vinegar dressing, cubed provolone cheese, cubed ham, pepperoni, olives, tortellini and grated veggies for filler.&#60;/p&#62;
&#60;p&#62;Another idea is grape tomatoes and sliced onion, cooked down with balsamic vinegar.  Toss it with penne.  It's super yummy, but not sure how kid friendly you need it to be.&#60;/p&#62;
&#60;p&#62;One more: you can do an Asian inspired noodle salad, there was one recently on the blog and you don't see those that often.
