We have had a Britax Blvd - cushy and comfy but hot. straps dont tangle! and they are easy to adjust. Maxi Cosi Pria 70 - cushy and comfy, cup holder but still hot. Straps got tangled all the time bu they are easy to adjust. And we just replaced the Pria due to a car accident with a Foonf. It is nice and compact, easy install. DD LOVES it, and it does not get hot because it is not super fluffy and cushy. It takes more to move the straps when DD grows but all in all I love it.

I have a son who's 2.5 and a 6.5 month daughter who's not in a convertible yet, but I've already bought her seats already. I haven't bought 2 of the same seats yet, unless you count the Rainier and Radian as the same (Rainier is new version of Radian).

We have:
An Evenflo Tribute - easy to install, but our son is 2.5 and he's too tall for it already. A good backup seat.
A Recaro Proride - comfy, sits high up so the kid can see out the window, easy to adjust (knobs! no rethreading!) and straps never twist. Love it, except bc it sits so high it's kind of difficult to get the kid into. This is my husband's favorite seat.
A Diono Radian RXT - I really like this seat, solid, easy to install. We replaced this seat when DH had an accident in our van (no kids in it, thankfully!) Though the Diono Rainier that I bought for DD is comfier, says DS, and seems easier to install and adjust.
A Safety 1st Guide 65 - This is by far the easiest seat I've ever had to install, EVER. Tied w/the Rainier for my current favorite seat.
Graco Milestone - haven't used this yet, but it's the carseat I chose to have insurance replace the crashed Diono Radian with. I could chose a "comparable" seat, and it allegedly performs better as a booster than the Rainier.

I'm using my car seat trade up to get DS a Graco Evolve Platinum. (not a convertible.)

@loveisstrange: Yep, this!

We have the Graco My Size 65 (or Size4Me 65, I forget and they are identical). We have the same seat for Xander (except the 70 because that's what they had in 2013). Love that it doesn't require rethreading as my kids grow. And love that it has a cup holder. :D

Diono Radian. We love them, so easy to use, especially compared with our old Britax Boulevard which we sold cheap to our neighbor after trying out the Diono. Super easy to get the kids in, and my large boy was maxing out the straps at barely 2 years old in the Britax. Not a problem at all with the Diono. And if you have or are considering 3 kids, they fit 3 in the back seat of most cars.

Clek Foonf. She loves how high she sits in it. I love how solid it is and how easy it is to install. It took up less space RF in my sedan than seats with comparable stats (Nextfit, Radian - extended RF is important to me). I have a Graco MySize in my mom's car, and it does the job at a lower price point, but I don't like it as well. It's less roomy for her (now that she's older) even though it's bulkier in the car. It's fine, but if it's in the budget, I want another Foonf for DD2.

We have the Diono and I like it because:
1) It has a high RF limit
2) Becomes a booster later on (with a high back or without)
3) Slim profile

Graco My Size 70. Love, love, love it. It's a great seat and really good for extended rear-facing. Plus, it's a lot easier on the pocketbook than a lot of the others with similar stats.

I have the Nextfit and we love it! Super easy to install, roomy for my LO with long legs but doesn't take up a crazy amount of space in the backseat, easy to adjust, and it just feels very safe and solid yet cushy. The Zip would be a nice upgrade for cleaning purposes - it didn't exist yet when we bought ours.

And not a convertible, but if either kid is forward facing I also like our Graco Nautilus Elite. It takes a few more minutes to install than the Nextfit or the more expensive Britax Combination seats, but it takes up a really minimal amount of space, is easy to adjust (main reason I got the Wlite), still has a steel reinforcement, and it was much cheaper than buying another Nextfit. It works as their forward facing five point harness seat (same level of safety as a forward facing convertible seat) and then it can convert to a high back and backless booster, so it should be the last seat I ever need to buy.

We have the nextfit zip, and love it. Lots of padding, easy to get her in and out of, and the over comes off easily for cleaning. Currently out of town and using a rental seat, and hate it. Looking forward to getting back to ours!

We might take advantage of the BRU car seat tradeup sale and get new convertibles for #2. We have Britax Boulevard currently that are three years old and the covers are pretty worn. Tell me what convertible you are using and why you love it or hate it.
