<description>&#60;p&#62;I like things that I can make ahead and serve at room temperature, like corn casserole, steamed string beans or brocolli dressed in olive oil and vinegar, etc.  &#60;/p&#62;
&#60;p&#62;I don't really care for mayo based potato or pasta salads, but I do like potato salad that is made with vinegar dressing and bacon and pasta salad made with pesto and shredded vegetables.&#60;/p&#62;
&#60;p&#62;I really want to try the cooler corn method, where you put a bunch of ears in a cooler with hot water...but no one else seems to think it's a cool idea, lol.

I can give you the exact recipe if you want, but basically you cut an avocado in half, brush with EVOO and lime juice, gill (cut side down) on the grill, and then when it's done, you fill the &#34;hole&#34; with salsa and sour cream. You can eat it with a fork, or chips!

the kids love potstickers and i never make enough and i use the pre made frozen ones;&#60;br /&#62;
edamame tossed with a little soy sauce;&#60;br /&#62;
hot crab/spinach dip or&#60;br /&#62;
spinach rolls (tortillas with spinach/mayo/sour cream/bacon/ranch dressing) which is so bad for you but so darn good;

<description>&#60;p&#62;I make a twist (well, to me it's a twist?) on traditional pasta salad that's great cold and better after a day in the fridge: cook pasta, sauté some veggies like squash, green beans, asparagus, etc. Even easier is throwing the veg in towards the end of the pasta boil time.&#60;br /&#62;
Drain, mix with pesto, throw grated parm on top, voila. Yum!&#60;br /&#62;
Can add chicken to make it more substantial.

&#60;p&#62;I loooove grilled peaches. Just cut in half and put on the grill. It does take up a fair amount of room though.&#60;/p&#62;
&#60;p&#62;DH's family is crazy about baked beans, so we've started putting a couple cans on the smoker. Just open them up and leave them in the can to smoke for a couple hours - freaking delicious.&#60;/p&#62;
&#60;p&#62;I made a cold pasta salad last weekend with ingredients in my fridge - super easy and crazy good! Pasta, corn, halved cherry tomatoes, olives, shredded cheese &#38;amp; whatever salad dressing you have (we used a sun-dried tomato vinaigrette)&#60;/p&#62;
&#60;p&#62;Bruschetta is another fave, but that's a day-of prep, and involves a fair amount of chopping
