I have made 0 progress and we're off soon, so I really need to focus.

I just called the resort and the kitchens are fully stocked and there are BBQ grills on the premises, but we'll probably skip that, because who knows how well they are cleaned and if they are available when we need them!

Where I am a bit stumped is condiments. We don't have room to bring anything in our suitcase and we usually just use olive oil and butter to cook and mustard and mayo on sandwiches. I hate to buy a big bottle of stuff and have to leave it, so I am open to some suggestions!

@looch: I'm not in Orlando, so I'm not familiar with that service. If you do need to make a run to Publix, or if the service shops there, I know that they carry the brands I mentioned. They also have the Applegate Farms brand of cheese/meat, which includes some frozen sausages that we often buy (LO digs them). They take 10 minutes in a pan on the stove--super easy. The other thing I really like for snacks/dessert is dried fruit. It's easy to store/transport.

@looch: I use the frozen tilapia fillets all the time, so it should be no problem. In that case, I'd bake at 400 or so until the fish is cooked through and then hit it with the broiler at the end.

@honeybear: The only place I know of to order from is Orlando Grocery Express.

@Smurfette: thanks! Taco night is on my plan!
@FutureMrsMcK: yes, snacks! Thank you!
@MediaNaranja: for the tostadas, if you use fish, is it cooked already? I wonder if I can sub in frozen fish filets?

Where are you ordering from? If it's a one-time delivery, I'd buy some frozen stuff. For frozen bread, I like the Alexia's brand. They've got packages of roll-sized bread that you stick in the oven that are nicer than a loaf of sliced bread for little sandwiches. Then some frozen peas/veggies for sides and frozen fruit for stirring into yogurt/oatmeal. It's easy to use a package of those up in a week and you don't have to worry about spoilage.

For snacks, I tend to pack fresh fruit and pouches because they're easy to carry. I get the Peter Rabbit brand pouches delivered via Amazon, but they're sold at Publix too (if that's where you're ordering from).

I don't really meal-plan, so I don't have a ton of suggestions on that front. But those are some products I like! :)

@Mrs. Bee: haha I know! I am taking notes and will report back!

Keep the suggestions coming! I have a lot of ideas myself, but they're all too complicated for the level of cooking I feel like doing on this trip!

One of my favorite easy meals are black bean tostadas. I puree a can of black beans with a little water, lime, salt and cumin. Spread on top of flour tortillas, sprinkle cheese and some shredded chicken, or fish on top and stick under the broiler until the edges of the tortilla are crisp. Serve with salsa and guac. Proba ly my favorite easy quick meal.

For lunches I would just get stuff for sandwiches, fruit, veggies, or maybe a pasta salad.

For breakfast I'd just keep it simple...cereal, yogurt, oatmeal, toast with pb, etc.

I'd also bring good snack foods to throw in your bag like granola bars.

- roast sweet potato slices in the oven (so easy and so good!)

Breakfast
- french toast, pancakes, bagels, frozen waffles
- eggs/bacon/sausage

I have to call the resort and find out what kind of cooking utensils are in the kitchen, I agree, I'd LOVE a crockpot, but as long as I have an idea of what we're doing, I am okay to cook. Plus, we'll be doing the parks in the morning and coming back to the resort for an afternoon nap.

I've already noted down some of your ideas, @purrpletulips and @Espion! Thanks!

It would be nice if there was a crock pot, then you wouldn't have to cook after a long day!

Chicken tacos: cook and shred chicken breasts. Mix in whatever you want (I usually do corn, black beans, salsa, spices). Combine together and serve with tortillas. Can add rice, refrained beans, cheese, etc. (It all gets tossed into a crockpot frozen and then shredded with 2 forks in the pot.)

You can spin deli sammies for dinner: get all the usual suspects, have everyone pile what they want on and then grill them. I like to fry up some bacon, slice cheese, etc to make them a little more special than just lunch.

Pasta primavera is also so good. Rigatoni, a couple small bags of frozen veggies, maybe some chicken and voilà!

And I always love "snack dinner". Veggies and dip, cut up fruit, hummus, etc.

We're going to Disney World for a week in Septemeber and we're staying offsite at a condo with a kitchen. We will have at least breakfast and dinner at home and lunch a day or two. It works out better than table dining because my son's kind of picky and won't tolerate long waits.

Anywho, we'll get groceries delivered and I will be planning the menu so I am not impulse shopping and end up wasting food since we can't bring it back with us.

I am looking for both meal planning and product ideas, I am not above convenience foods and we'll need to bring snacks and possibly lunch to the parks.

Ideas? Ready, Set, GO!!!!
