I've never cooked with pumpkin before but these recipes all sound great-- I may give one of them a try this weekend since I think it's going to be a little cooler here this weekend. A taste of fall :)

@regberadaisy: I don't think it takes longer to cook pumpkin (?) - I don't remember it taking longer to cook than butternut, so if it takes longer, it must not be too much longer!

@Foodnerd81: Yes! Those pumpkin and black bean enchiladas are SO GOOD!!! I think I know what I'm making for dinner this weekend.......

Make a pasta sauce using canned pumpkin, white wine, Italian sausage crumbles, sage, butter, S+P, and a dash of nutmeg. A little onion too if you like. A little cream if you want it richer. On bowtie pasta is my favorite, topped with a little parm.

@yoursilverlining: I was curious if it's interchangeable with other squash recipes. Does it take longer than like a butternut?
The afghan recipe sounds really good! I'll have to bookmark that to try soon. :)

@Foodnerd81: @winniebee just made that skinny taste recipe the other night too! I'll have to try that. Too bad LO isn't a huge chili fan. ;)

Mmmm I love pumpkin. I'm literally about to make this turkey pumpkin chili- it's my favorite and so easy. I actually turned the computer on to pull up the recipe and got distracted by HB. I've made it for someone who doesn't really like pumpkin (oops, but how do you not like pumpkin?) but he still liked this.
http://www.skinnytaste.com/2011/10/crockpot-turkey-white-bean-pumpkin.html

I'm also a big fan of this pumpkin pasta recipe from Rachael Ray:
http://www.foodnetwork.com/recipes/rachael-ray/penne-wise-pumpkin-pasta-recipe.html (I usually skip the sage because I'm cheap and lazy but it does make it better).

And someone on here posted these awesome pumpkin and black bean enchiladas, I'll see if I can find the recipe. So tasty.

I use canned pumpkin puree. I made it from a whole pumpkin once, and in the end... it tasted just like the canned and took a lot of time. But I'm sure if you were doing something with cubed pumpkin and not pureeing it would be delicious.

@yoursilverlining: I would very much like to come to your house for dinner. Thanks. :)

I love cooking with pumpkin. Some of our favorite dishes to make with pumpkin are:

In place of squash or sweet potato. We make a great vegetarian red curry with sweet potatoes and pumpkin works just as well.

In Kadu Bouranee (Afghan recipe). It’s chunks of pumpkin, cooked soft and served with meat (we use ground beef) over rice with spiced greek yogurt. Really good. http://www.bigoven.com/recipe/afghan-pumpkins-kadu-bouranee-sweet-pumpkin/153647

Pumpkin fettuccine. Puree cooked pumpkin into a sauce, with some parmesan cheese.

Pumpkin soup (like butternut squash soup/bisque but with pumpkin). We make it 2 different ways: 1) curried and 2) with apples to give it a hint of sweet.

Adding pumpkin puree to mac and cheese (I’m not a HUGE fan of this, but it’s ok)

Pumpkin ravioli with sage butter sauce

Pumpkin spice cookies are super easy and tasty!
- One package of spice cake mix
- One cup of pumpkin (fresh or canned)
- Anything else you feel like adding... nuts, chocolate chips (white are really good in these!)
Bake at 350 for 10-12 minutes.

ETA: Sorry, I totally missed the whole concept of this post! For cooking with pumpkin, I have made pumpkin ravioli, pumpkin soup and pumpkin chili. So good!

I use canned because I'm lazy. There is a pumpkin chili that is REALLY tasty.
