<description>&#60;p&#62;@Mamaof2: Don't compare it to packaged mac and cheese, you'll never get the same results unless you used processed cheese food, like Velveeta.  &#60;/p&#62;
&#60;p&#62;I boil the pasta, usually the small elbows or shells.  Drain well and then I add in a lump of butter and a bit of milk.  I then just stir in the laughing cow.  It's how my mom made it for me when I was little!

<description>&#60;p&#62;@Smurfette: A bechamel sauce is one of the mother sauces, you basically melt some butter in a pan, and then add in a few tablespoons of flour and stir.  When it becomes pale yellow and holds together, add in warmed milk and then you stir until thickened.  Once you have it thickened, you add in the shredded cheese and stir until melted.  It's a great way to make mac and cheese because the cheese won't get stringy or separated.&#60;/p&#62;
&#60;p&#62;But in truth, the way I make mac and cheese for my son is to melt a wedge of Laughing Cow cheese in hot pasta, so....

<description>&#60;p&#62;Mine comes out rather cheesy and creamy. I use at least a 1:1 ratio pasta to cheese.&#60;/p&#62;
&#60;p&#62;My most recent super creamy concoction was this:&#60;/p&#62;
&#60;p&#62;16 oz total split between sharp cheddar and gouda&#60;br /&#62;
Half cup whipping cream&#60;br /&#62;
1 egg (whisk)&#60;br /&#62;
12 oz cooked macaroni &#60;/p&#62;
&#60;p&#62;after draining the pasta, add egg &#38;amp; any seasoning you want&#60;br /&#62;
On stove top, stir in the shredded cheese and cream&#60;br /&#62;
then add pasta for a few last stirs&#60;br /&#62;
place cheesy pasta mix into baking dish&#60;br /&#62;
I always top with something, but I don't know if that helps with keeping the mac &#38;amp; cheese creamy.
