yes to bone broth in the slow cooker! I made it last week and it was very easy :)

I would like to make the perfect chocolate cake. One my husband LOVES. I'm really not a chocolate cake fan, but I'd like to add it to my repertoire.

Recently I've mastered the perfect frosting. It's swiss meringue buttercream. I'd tried TONS of frostings before and this is now my go-to frosting.

@Arden: Oh, and in terms of bone broth, I make it overnight in my slow-cooker. It's ridiculously low maintenance! I then freeze the broth in ice cube trays and pop the cubes into freezer bags. Then I just grab however many I need any time I want to deglaze a pan, make a gravy or use as the base for a soup.

DH and I are both super into cooking and are always trying new recipes and working on honing our skills. I love baking bread (my favourite is a cardamom-scented challah) and taking on a whole variety of culinary challenges.

The one thing that I've said I wanted to master for years now (ever since reading an article about it in Saveur in 2005.....I really need to get on it!) is making perfect strudel from scratch. One of these days....

Yep, I have one!

- homemade ravioli
- better my knife skills
- learn to make tortillas
- learn my grandmother's recipes - she gave me recipe cards at Christmas all filled out with her recipes. Her pies, cheese sauce, and yeast rolls are to die for.

@Arden: It IS fun! so far all of my breads have been based on one recipe, which i keep altering, and it gets better every time! but i find that without a bread machine, it's hard to get the proper rise on a quick bread...the bread i make is a little more like a banana loaf in size. maybe i just need to keep searching out different recipes! (i cant eat gluten, so it's somewhat limiting). this might be my reason for finally joining pinterest ;)

What a great idea! I made homemade tortillas and they are simply awesomeness. However the work was not worth it so we buy uncooked ones from Costco that only have 'whole' ingredients and we eat them up w/o the work. Thanks for the crust recipe, @artbee.

That's a big list! Unfortunately I don't have time to do a lot of what I'd like.... but you did inspire me to pin a make your own mozzarella cheese recipe, hopefully I'll get to that one soon :)

You should try my grandma's pie crust recipe, it's very easy, but yummy and very flaky. It's for the top and bottom crust, so if you only want the bottom just half it. Don't over mix, I always use my hands. And it's very scamp so you have to roll it out super thin.
2 cups flour
1/2 cup oil
1/4 cup milk

@LovelyPlum: Hmm, I need to work on my Asian cooking too. Curry I've got down, a lot of Middle Eastern and Indian dishes I'm comfortable with making, but I don't know much about East Asian cooking except for sushi.

Awesome! I'll have to think about this. My knife skills are getting better, but they are not there yet. I also want to work o mastering some Asian flavors. I can do some basics , like soup, but my curry needs work.

I love this! I also want to work on my knife skills, and become more confident with cooking meats (knowing when they are done). I'm a novice when it comes to cooking and I'm always learning! I've been making my own bread, but ive only made quick breads. I really want a bread machine so i can do the real stuff! And an ice cream maker :)

DH recently started making bread using a book called "Flour Water Salt Yeast." No joke, it's the best bread I've had outside of France. It's the kind of bread that would make a Paleo weep. :) But it's also a long, tool-intensive process. I am not exaggerating when I say the results are AMAZING. If I didn't have a 2yo to keep happy, I'd join him in this project in a heartbeat. Worth looking into!

I want to learn how to slice up and use a whole chicken instead of just buying breast filets!

I'm now working on fine tuning my risotto and experimenting on pastas. But in no way close to your list - I'm saving the "making my own pasta" for DD when she's old enough (and interested).

Another thing on my list is making my own hummus and matzo ball soup.

@Arden: This sounds like a good challenge to keep your mind off things. I do about one batch of ice-cream a month. It really is so much better than store stuff. Hazelnut praline and disaronno is probably my fav at the moment.

Home made yogurt could be a good one too. (If you are more healthy than me!)

@sea_bass: I've mastered regular bread, but sourdough is something I've never tried and I think it might be a healthier option so I'd like to learn it. Ice cream is a good idea (although maybe dangerous)!

I've decided I want to master some new cooking skills over the next year or two, and so I am creating a "culinary bucket list".

It's a list of culinary skills I either want to learn or improve.

- Master the skill of homemade pasta and ravioli
- Learn to make ricotta cheese
- Start a sourdough starter
- Master the perfect risotto
- Learn to make mozzarella cheese
- Master the five mother sauces of french cuisine
- Start making bone broth and integrating it into our meals
- Improve my knife skills (they are good, but they could be a lot better)
- Master the perfect pie crust
- Hone my barista skills and become the queen of coffee
- Start always making tortillas/pita bread/naan/taco shells from scratch and stop buying them

What other cooking skills should I add to my list? What skills would you like to perfect?
