They would write down descriptions of people to keep track of who was who instead of table numbers. I feel like these pop up from time to time and I always breathe a sigh of relief that I never did anything like this. </p> <p>As a former bartender, frequently you name groups of people rather than use the seat numbers - so when you have "Jen," who's a regular and her friends you call the group "Jen." I always named strangers with something innocuous (green shirt) or from their credit card if they were holding the tab that way, not from any characteristics that would be offensive when it shows up on the checks.
