&#60;p&#62;@aprild: agree, I love soup too, and you can make so many vegetarian soups. Smitten kitchen has a great broccoli cheddar soup. &#60;/p&#62;
&#60;p&#62;I also love bowls, take any sort of grain like quinoa, rice, kamut, bulgar, whatever, and top it with tofu, edamame pods, avocado, shredded cheese, diced raw veggies, etc. &#60;/p&#62;
&#60;p&#62;One of my very favorite dishes is braised white beans with garlic and rosemary. <description>&#60;p&#62;We do something called beans, rice, and cheese. I think my mom made it up as a kid. &#60;/p&#62;
&#60;p&#62;I take 16 oz of pre-soaked black beans, a jar of salsa (usually a 12 oz jar of salsa verde, but I think my mom used Pace style stuff), and then fill the jar with water and throw them all in the crock pot until dinner time. I watch it and turn the heat down if it seems like it's burning at all. Then put it on top of rice and top with cheese. My son gobbles it up! He almost always asks for seconds, and we can usually get 2 meals out of the 16 oz of beans!

<description>&#60;p&#62;I don't eat meat/seafood, so I cook without meat and DH will only occasionally cook meat for himself (more as a side). Some of our favourites:&#60;/p&#62;
&#60;p&#62;-Portobello mushroom &#34;cheesesteaks&#34; (I used a recipe the first time but now I wing it. I add onions, green pepper and melt cheese over it all on sub buns)&#60;br /&#62;
-Pasta dishes (Skinnytaste Baked broccoli mac and cheese, Giada's Baked penne with roasted veggies, Kitchen Treaty's Slow cooker chili mac)&#60;br /&#62;
-Buddha bowls are amazing (Minimalist Baker has a Sweet potato and chickpea one that is so tasty)&#60;br /&#62;
-Quesadillas (I love caramelizing onions and adding cheese and spinach, but there are endless variations)&#60;br /&#62;
-Burritos and burrito bowls&#60;br /&#62;
-Tacos (we sometimes do Roasted chickpea and cauliflower tacos... I can't remember who the recipe is from but they are heaven)&#60;br /&#62;
-Rice, beans and veggies (I meal prep this stuff a lot on Sundays and eat through the week)

<description>&#60;p&#62;Quinoa casseroles. (There are so many different flavours) but I make the pizza flavour one and the spinach artichoke one because the adults and kids will eat them. &#60;/p&#62;
