<description>&#60;p&#62;Hot potato salad: potatoes in bite sized pieces, boiled, until you can poke a fork in them and eat.  Throw them in a bowl with some minced green onions, soy sauce, and a tiny sprinkle of cayenne pepper.  We usually put butter in the bowl too, but you can throw a bit of olive oil instead.  Super easy and quite tasty.  &#60;/p&#62;
&#60;p&#62;Kale salad: chopped up kale, diced tomatoes, diced red onion, diced avocado, mix it all up with some lemon juice, olive oil, salt and pepper to taste, it's super delicious!&#60;/p&#62;
&#60;p&#62;Pasta salad: without the cheese!  I don't use a mayo or cream dressing for my pasta salad.  I mix up veggies (cherry tomatoes, peppers, cucumber, onion) and tri-colour fusilli with a homemade dressing of: oil, apple cider vinegar, squirt of mustard, squirt of lemon juice, italian herbs (basil, thyme, oregano), grated garlic, salt, pepper, squirt of maple syrup or honey, and then pour over top (my granny's dressing recipe that tries to include all tastes).  Sometimes right before serving I will throw on a bit more dressing or store bought Italian dressing.&#60;/p&#62;
&#60;p&#62;Vegetarian chili or meat chili: I made vegetarian chili for my last staff pot luck-dairy free no matter how you make it!&#60;/p&#62;
&#60;p&#62;Bean salad: you buy precooked mixed beans and mix with finely chopped green apple, cucumber, and put a dressing on top.&#60;/p&#62;
&#60;p&#62;Those are my ideas for now!  It's nice that you remember / are trying to make something special.

<description>&#60;p&#62;At work, we are all bringing sides and snacks next week and I wanted to bring a dairy free option. One of my coworkers has a dairy allergy and from what I've seen so far, no one remembers this when it comes to office potlucks and this coworker is usually stuck eating what he brings himself or nibbling on a veggie tray. &#60;/p&#62;
&#60;p&#62;He and I work together on a LOT of projects and I think it hurts his feelings that no one considers his allergy, not that he expects 100% to be dairy free by any means!&#60;/p&#62;
&#60;p&#62;So if you have an easy dairy free side dish recipe, I'd love to hear it!!
