If the recipe says to bake in 2 tins for X minutes, could you lower the baking time by how many tins your actually dividing it into? (So, if you do 3 tins, then reduce the baking time by a third?) Tasty though. Not sure if it was me or just the recipe.. My layers were maybe a little over an inch thick? Thinner than i expected. Perhaps if I had whipped more air into them before baking, I would have has better thickness. It took a long time to tint the batter, so I think I lost a lot of volume during that process. I just did a trial of three layers last night and the colours were great but I guess they were a bit thin, they came out a bit dry but with a nice taste. I'm thinking to try thicker layers. What size were your layers? Did they come out nice and moist? I moved them, still covered, into the fridge to thaw the night before I wanted to use them. </p> <p>I frosted it the day I used it, because the frosting I was using had a good amount of Greek yogurt in it and I wasn't sure how well that would do being frozen and thawed. I also made the icing several days in advance and kept it in the fridge and whipped it up before decorating. I assembled and decorated the day of. The cakes defrosted quickly while I was assembling since the layers were pretty thin.. The assembly and icing was actually the easiest part for me..the hardest part was getting the batter to the colors I wanted. Took a lot more food coloring than I anticipated and was time intensive. Good luck!
