We got married at the beach and my mom took it home in the car (to Alabama) and we later drove it home to where we live (9 hour drive). THEN we decided to spend our first anniversary at the beach where we got married so it made the 13 hour car ride BACK down to the beach (with an overnight hotel stay in a cooler). It was soooooo disgusting! I cut it into 4 or 5 large chunks and individually froze them (many layers of saran wrap, foil and then freezer ziplock bag). Occasionally throughout the first year, I would defrost a chunk to eat just cuz I was in the mood. A year is generally the high end of how long it's recommended to consume frozen food. I prefer to err on the side of caution and will toss things that have been in there for more than 6 months (or less, sometimes).
