@MaisyMay: @mediagirl: @Smurfette: Thanks for the suggestion, I think I might be able to manage that. When I was a kid, my mom used to make us mac and cheese and ham and peas. She'd either keep the ham separate in small steaks for us or cut it up and mix it in the mac and cheese. It was a one pot wonder that covered most of our food group needs. I think chicken with mac and cheese and peas or broccoli sounds great. Thanks!

We like mac'n'cheese with veggies mixed in. Maybe serve chicken with it?

@MRS. LEMON-LIME: We had spaghetti last night for supper and DH took all the leftovers with him to work for lunch. Not only that but we're out of spaghetti pasta and have no spaghetti sauce.

@NaturallyCathy: Take your precooked chicken breasts out and heat them up in the oven. Cook up your mac n cheese using your butter and milk and then, when the chicken is warm, cut it up into bite-sized pieces and put it into your mac n cheese. Voila - chicken mac n cheese. Do you have any frozen veggies? You could steam up some broccoli or green beans and have them as your side.

@NaturallyCathy: What about mac n cheese with the frozen chicken mixed in? Then some veggies on the side. Or do bacon and eggs. I personally love breakfast for dinner. You have plenty to work with. And there is nothing wrong with doing PB&J sandwiches.

@jessiejo17: @Smurfette: @JoJoGirl: I have no soup, I have no sandwich meat. I have frozen beef bits (think stew meat), frozen (but precooked) chicken breasts, some rice (not minute rice by a long stretch), some eggs, some milk, some 'instant' sides that take fifteen minutes on the stove, canned tuna (DH hates tuna but I like it), peanut butter and jelly, cereal, bacon, carrots, potatoes, mac and cheese in a box (actually several boxes of that), and my frozen veggies are mostly peas, green beans, broccoli and brussel sprouts. I think I might have some french fries buried somewhere.

In other words, we desperately need to go shopping.

What about breakfast? Scrambled eggs, sausage and some frozen biscuits?
Or spaghetti? Or so soup and sandwiches? Hot dogs and mac n cheese. Trying to think of the east meals Mom did growing up when my Dad was traveling.

I'm in the same boat as you, DH is going to a basketball game tonight so it is just me and the little one. My go to quick meal is spaghetti (easy enough to boil noodles and a jar of pasta sauce on low, or canned soup and sandwich is an easy quick fix. Or I will do a casserole (i'm a cream of soup fan though, I know several aren't) that I throw together ground beef, cream of mushroom, 1/4 cup milk, cheese, and 1 cup minute rice. Top with tator tots.

Do you have a slow cooker? Maybe you can make something after LO goes to bed and then put it on to cook in the morning. I make beef chili this way (brown the beef, add the beans, spices, pepper, etc) then put it in the fridge overnight and turn it on in the morning before i go to work.. when I get home dinner for the next two nights is done!

ETA oops this is for tonight. What ingredients do you have again? Can you do a quick stir fry with the meat and some veggies? Or just broil the meat?

DH won't be home in time to make dinner like usual and I'm struggling to come up with something that's not going to take a lot of effort to cook! We don't have frozen pizzas or anything in our freezer, just a variety of meats, pastas, vegetables, etc in our freezer and pantry. I won't have time to stand over a stove and cook like he does because I'll be busy with my LO. Any suggestions for easy, filling meal?
