@mrsmenow: I'm going to go with grilled chicken and veggies! But everyone has convinced me to try roasting a chicken! I'll test it with DH before serving to guests :)

@Weagle: this is super easy and quick - cold Thai noodle salad. Add some grilled flank steak or shrimp or tofu as your protein.

ETA: The turkey is probably the easiest thing to cook at thanksgiving, no joke.

roast chicken is super easy!! i used to be intimidated too, but recently tried it for the first time 2 months ago, and it is one of the tastiest, easiest staples on our menu now.

i follow this recipe - http://allrecipes.com/Recipe/Juicy-Roasted-Chicken/Detail.aspx - but the cooking time is about 30-min longer than listed. i put whole garlic cloves, butter, lemon slices, and celery in the cavity. delish!!

@Weagle: the ones I've bought have the innards inside in a bag. Just pull em out and toss em! Also we've done the chicken in a slow cooker before too. Even simpler.

@aprk: Are there innards that I would need to clean out? Honestly, that's pretty much why I've never volunteered to cook the Thanksgiving turkey :)

@Weagle: yes :) it sounds more complicated than it is! We just do salt and pepper on the thawed chicken, in the oven for ~2 hours. Low maintenance but impressive.

@mrsmenow: As of yesterday, yes, it is warm enough to grill :). Maybe we'll do that since DH would be in garage if part if the meal. And it's fast! There's very little prep time.

@Weagle: Maybe grilled chicken breasts, mixed grilled veggies and rice. Do you live somewhere warm enough to grill yet?

We have company coming over for dinner tomorrow, and I have nothing planned! I just keep putting it off. It needs to be something quick because we have playgroup tomorrow and I need to run to the store for ingredients. Plus, the wife is a super healthy eater. Ideas?
