This is my "Cheater recipe for nights when I just cannot be bothered". I'm sharing the secret. :P

Take two cans of garbonzo beans. Sauté them with a little olive or coconut oil until they begin to get crispy on the outside. Dump a container of Progesso Artisan Masala Curry Butternut Squash Soup over the beans. Simmer down, serve over rice.

Easiest meal ever.

@Periwinkle: I can't believe it took me this long to come up with it. It helps SO much. I am working on doing pinterest boards for each recipe. It helps me cook with seasonal ingredients, too- I can look for pasta dishes that include root vegetables in the winter, for example.

@T.H.O.U.: Oooh, that sounds amazing! I'll have to try this soon.

@Silva: That's a great way to simplify things. Way better than my categorization of late, "cereal" vs. "something other than cereal." :)

One thing that helped me was designating a meal "type" for each night of the week. Then I can search for recipes that are quick and healthy and don't have to think so much!
So we do:
Monday - soup
Tuesday - pasta
Wednesday - tex/mex
Thursday - fish
Friday - sandwiches/burgers (veggie, salmon, beef, turkey, we mix it up, but it's usually a "fun" dinner)

If we double up on something, like say we do fishtacos, I do a salad night (salad of some kind with a protein). In the summer we do salad instead of soup.

Eta: we usually plan weekends based on social plans, leftovers, etc. we often do pizza on Sundays because we make homemade, the dough has to rise, and we use a pizza stone...the whole process requires two adults (one to wrangle baby)

@Meridian: I just bought a jar of "Cajun" seasoning from the store. No idea what's in it! Tonight we made it and didn't have tomatoes or garlic and it still came out great.

@Periwinkle: I am making this tonight. Its pretty easy for a week night (about 45 minutes total for prep and cook time).

We're having bean soup in the crock pot tonight. I am really into crock pot cooking right now, last week we had 3 crock pot meals which were the only nights we cooked.

I just recently bought Mark Bittman's cookbook, I forget the exact title, but it is a ll about simple things to make during the week. The recipes are really loose, like:

While you are heating up some olive oil in a frying pan, chop an onion. If you have garlic, chop a clove or two.

Really reasonable for a weeknight cook.

@MediaNaranja: That sounds delicious! I actually make black beans in the crock pot last night so this could be a winner for this week!

@locavore_mama: I am in love with freezer meals. I don't know why, but I always feel better going into the week with everything already made. Makes for less exciting dinners (or more predictable, at any rate), but I would rather do some work on the weekend and then eat before 9pm during the week!

I like making black bean tostadas. I use this recipe as a jump-off point. Super easy and yummy, and something that my picky husband will even eat!
http://www.myrecipes.com/recipe/soft-black-bean-tostadas-10000001141960/

I also like to get the pre-seasoned chicken thighs from my supermarket and will just bake them and serve with rice and some sort of salad.

I just discovered stroganoff is a totally do-able weekenight meal. We made it for dinner last night and it's totally do-able in a 45 minute time frame.

I also do stir fries a lot. We tend to make a "bigger" meal on nights DH doesn't work late then eat leftovers the next night. Pasta is great for that.

I also make freezer meals on the weekends! Meatloaf, shepherds pie and soups freeze really well!

Ladies, I'm in a bit of a dinner slump and would love some new ideas for (keyword: easy!) weeknight dinners. I am a pretty simple cook and tend to prepare a few meals on the weekend which we eat throughout the week, but I think my husband may lose it if we have chili one more time!

What's your go-to meal during the week?
