&#60;p&#62;I would prepare that night time will be cold/chilly.  Both parks (especially Epcot) are around a lake and the night wind can be cold.  &#60;/p&#62;
&#60;p&#62;The food is great!  Disney Food Blog has lots of posts and shows you the menu.  I dont know that you would want to do the dining reservations alone but at least get an idea for the take out services.  &#60;/p&#62;

<description>&#60;p&#62;Maybe you've already made up your mind, but I just wanted to put my 2 cents in since I've been in your situation. A few years ago I had a conference at one of the Disney hotels, and the conference advertised those same discounted after 5pm tix. We didn't end up getting them, but we did try taking the Disney shuttle to one of the adjacent Disney areas (something like Downtown Disney maybe?) after the conference, and it took FOREVER and felt super stressful! Granted, this was in May, not December, so hopefully you have a better time with that.

<description>&#60;p&#62;Check out if Disney After Hours is offered during your dates ... it's about the same cost as a 1 day MK ticket and gives you the entire theme park with zero lines after the park closes. It looks amazing and I want to do it our next trip! You could see so much in one visit that way. &#60;/p&#62;

I would do Epcot for sure. It’s my favorite (I’ve been 3 times as an adult without kids). The countries are awesome and probably something kids would be less interested in so it’s better to go without. Lots of food and booze!&#60;br /&#62;
They also have some cooler exhibits that kids might not like. More technology driven stuff. It’s been a while but they used to have a futuristic house that I thought was so cool. And a whole garden/greenhouse with cool hybrids and stuff.&#60;br /&#62;
They also had some great simulation rides that young kids would be too small for. I mean this was 10 years ago, I bet it’s even better now!&#60;br /&#62;
Then if you Like rides I’d do the Disney Hollywood studios. More thrill type rides. &#60;/p&#62;
&#60;p&#62;I guess the Magic Kingdom is very classic but I personally felt it was my least favorite and the most kid-centric.

<description>&#60;p&#62;Do it!! I went to WDW solo 2 years ago because I was at a work conference and staying at the Yacht Club. Going solo is AWESOME sauce because you don’t have to plan around anyone else and can just do whatever you like. Also, a bunch of rides have “single rider” lines which were always super short so I could go on rides I liked that had long lines several times without much of a wait at all.

<description>&#60;p&#62;I would go to Epcot and tour the countries. There’s good food, unique shopping, and a ride or two if you’re interested. Plus they have great fireworks too. Make reservations for the nice restaurants!&#60;/p&#62;
&#60;p&#62;Personally, if I was doing solo, I would avoid Magic Kingdom. There’s a lot of kids 😂 I wouldn’t want to stand by myself in all the lines for rides too. Even with fast passes, it can be 30 minute wait for some of the popular rides. &#60;/p&#62;
&#60;p&#62;I would go to Disney Springs. It’s free. There’s restaurants. There’s shopping. I think there’s a Cirque de Soleil show too.

<description>&#60;p&#62;Do it! For magic kingdom I would just grab a map and do what sounds fun!  Most popular rides have a single rider line, so you should be able to do a lot. Grab some yummy snacks and wander around enjoying the ambiance before fireworks.  At Epcot,  you should be able to get bar seating for 1 pretty easy,  or even see if you can get a reservation if you want something specific.  &#60;/p&#62;

<description>&#60;p&#62;I haven't been in years and so can't really help with ideas, but I think you'd probably have a great time going by yourself. It would be a different kind of fun than with kids, but I still think it would be fantastic - I'm thinking about waiting in lines listening to podcasts and not worrying about entertaining children, staying late to watch the fireworks without caring about bedtimes, having a beer, etc.

&#60;p&#62;I haven't been since I was 10, wasn't too interested when planning for this trip, and now I am slowly starting to think I'd really like to do it!&#60;/p&#62;
&#60;p&#62;I'd like to go to Magic Kingdom one night, and Epcot one night, I think.&#60;/p&#62;
&#60;p&#62;What would you do if you were in my shoes?? I like rides, good food, fireworks, etc. I know nothing about how to do Disney. I did see there's a reduced price for going after 5. Please share any advice/tips you might have - I know there are many of you who are really good at planning out the best Disney trips.&#60;/p&#62;
&#60;p&#62;Also - do you think I'm crazy for going by myself? Is this more fun with kids?&#60;/p&#62;
