If it was someone I was close to, I would do a gift card, either for coffee/food for the trip or Target/Home Depot etc for the new home. In this case I'm not sure if I would! ;)

If you're not close, no. If you were closer, I'd say something sentimental like a print or an art book of your city could be thoughtful. I've done (and received) things like that as a group gift - particularly a book used as a guest book where other people write messages. BUTTTTTTTTTTT...... :) Since you're not very close to them, I'd say it's totally on their closer friends if they want to organize something like that for the couple.

A neighbor moved away and had like a bye barbecue. most of their items were already packed. I did get them like a $20 Starbucks gift card bc they were making a road trip out of their move cross country with two kids. Also, they gave us a whole bunch of outgrown toys, kids decor, etc that we appreciated so I wanted to show thanks. I had my LO make a small card and we just put the gift card in there.

Agree that I wouldn't want to saddle them with another thing to pack. So a consumable (maybe if they're driving cross country a cool "care package" for the drive) OR a gift card they can use for the new house - lowes or target or something like that.
ETA: I also wouldn't go overboard. Like $25. I just don't think this is something that is necessary, so a small token is nice. And I totally wouldn't expect a going away gift so I think if you want to skip it it's totally fine.

I bring a consumable based on @Foodnerd81's logic.

We've been invited to a going away party for my husband's cousin and his wife. They have only lived in our city a few years, but they are moving away to the other side of the country. I'm not sure if it's standard to bring a gift or not or what we would give them. If it matters, we aren't close to them. While they lived here, they kept to themselves, so we rarely saw them.
