Tastes just like a regular taco when you put on all your toppings and stuff. It is a way to save some $$ to stretch meat, and also adds fiber and nutrients!

&#60;p&#62;I love beans! We eat them all the time! Cheap and easy!&#60;/p&#62;
&#60;p&#62;When dealing with dried beans, my slow cooker is the best tool ever. Throw a bag or two of dried beans in the slow cooker (rinsed and picked over, just to make sure there aren't any rocks in there). Throw in a 28 oz can of chopped or diced tomatoes, a can of diced chili peppers (I find them in the &#34;ethnic foods&#34; section in Giant), along with a chopped onion, and then whatever veggies I need to use up in the fridge- celery, sweet potatoes, butternut squash, sweet peppers. regular potatoes, etc. and then cook on high for about 6 hours. Add a cup of water or veggie/chicken broth if it looks dry, and at the end, you'll have a pretty good vegetarian chili.&#60;/p&#62;
&#60;p&#62;If I want to make it non-veggie, I'll get a Costco rotisserie chicken, pair it with a salad, and I have a fab Sunday dinner, along with enough leftovers for lunch the next few days! I use this chili recipe to clean out my fridge of any veggies that are close to being bad.

<description>&#60;p&#62;We made this for dinner three nights ago and I'm already craving it again -- so amazingly simple and good!! The only downside is you need a bunch of parmesan rinds (you can buy a container of them from Whole Foods). This recipe calls for white beans, but you could easily sub darker ones. Also, we upped the beans to 3 cups instead of 1.25 because we really love them! &#60;/p&#62;

<description>&#60;p&#62;I made some really good refried (sorta) black beans last night! &#60;/p&#62;
&#60;p&#62;Add some olive oil to a sauté pan, when it heats up sauté 1/2 an onion and 2 tomatoes chopped up, then a few cloves of garlic. When everything is soft, add 1 can rinsed black beans and heat until they are warmed through. I added a bit of salt at this point too. Then put everything in a food processor and blend until it is refried bean texture. You can also add cilantro if you have any (I didn't). They are good to eat just plain, or as a dip for chips! We used them to make tostados with some crisped up corn tortillas and salsa.
