<description>&#60;p&#62;So funny!  I just finished my leftover quinoa for lunch!  The way I made it this time was to cook some quinoa in a rice cooker.  I also roasted 2 small summer squash, 2 small zuchhini, and a box of halved grape tomatoes.  I added those in with the cooked quinoa along with some cooked swiss chard and a small log of goat cheese.  Mix it all up, add some salt, and it tastes great!  Even DH likes it, and he always complains about my veggie meals.  &#60;/p&#62;
&#60;p&#62;The other way I like to have my quinoa is mixed with cubed feta cheese, chopped red onion and red bell pepper, dried cherries, and shelled edamame.  I put a light vinagarette on top of all of that.

<description>&#60;p&#62;We make it lots of different ways, but our current favorite is to prepare it with curry and other spices.  We saute onions, garlic and fresh ginger in a tiny amount of olive oil and add fat free low sodium chicken broth (twice the volume of the quinoa).  Then we add curry, coriander, cayenne pepper, whatever we have on hand that seems to &#34;go&#34; and bring that to a boil.  Then add in quinoa, put a lid on it for a while and enjoy!  It ends up having a ton of flavor and it's healthy and filling.  If I have them on-hand, I also like to add slivered almonds and/or dried currants at the very end to shake up the texture a little bit.

<description>&#60;p&#62;I basically sub quinoa for rice in many dishes or I do half quinoa/half brown rice.  For example, quinoa pilaf, fried rice with half/half, add to soups instead of rice, etc..  I also do 1/3 quinoa, 2/3 oatmeal for breakfast.  Grind up quinoa in a coffee grinder and sub it for 1/2 the flour in baking goods.  My favorite though is quinoa pudding (made like rice pudding).

&#60;p&#62;- Cook with chicken stock instead of water (so it’s a little richer), and have a little parmesan cheese on top&#60;br /&#62;
- Cook and add lemon zest and a bit of lemon juice at the end&#60;br /&#62;
- “Summer salad”: quinoa, red onion, jalapeno, cucumber, avocado, lime juice, cilantro. Great with BBQ.
