I leave them out in the fridge to defrost for at least 24 hours - sometimes more if they've been sitting in our deep freezer. This way I can buy the big bag of chicken breasts or frozen oxtail and use as necessary. It's super convenient and it doesn't change the taste/quality. We mostly eat and freeze: bacon, pork loin, all types of chicken, ground turkey, and ground beef. This way I can take advantage of what's on sale or what's available at the farmers market that week. All of our ground beef and chicken is organic bought. It is a great way to take advantage of sales or buy in bulk at our Farmer's Market or Costco. I just try to plan our week slightly in advance - hamburg and steak will last us two meals, while chicken usually only lasts one. So if we're having hamburgers on Monday, I'll pull out steak or chicken from the freezer that day to be ready for Wednesday. Leftover hamburg is used in pasta sauce for Tuesday. I'm a wishy-washy meal planner, but I mostly buy the same meats and have a few dishes different dishes I can make (or look for something new occasionally). When I'm ready to use meat in the freezer, I just take it out in the morning before work and put it in the freezer. If it's not completely frozen I just set it on the counter while I'm preparing the rest of dinner. I feel like freezing is better because I can buy family packs for a discount or stock up on sales and just leave it in the freezer.
