I'm too chicken and the position holding is uncomfortable. Slow and steady for me or I'll ask the hubby to do it. Ha! I even took a professional knife skills course at a local college a few years ago to improve my technique. The best thing the Food Network (or Top Chef) taught me, was how to hold the knife and how to hold the food so you don't cut off your fingers!
