Well, whatever can easily be made vegetarian, which I think a lot can. We even did vegan Korean BBQ at home once. DH lived in Korea from ages 2-7 so his fam eats a lot of Korean dishes. And my SIL on DH's side (his brother's wife) is Korean so we always eat good stuff when we visit them. </p> <p>Kimbap is one of my go to easy (ish, besides all the chopping) dinners b/c you can just put whatever you want in. (Right? At least I do...) I like kimchi, but I've only actually made it once.</p> <p>We're going to Korea at the end of the month and I can't wait! I love old kimchi, the kind they bury for a year. It was one of the things I acquired while living in Korea.
