<description>&#60;p&#62;We make our own sauce; it really doesn’t take that much time; and your whole house smells so good! We usually make a big, big batch of red sauce at the end of summer when tomatoes are really cheap in bulk at the farmers market. We make both regular red sauce and Arabbiata sauce. We also make big batches of pesto sauce every few months, which is super easy to make and is great for pasta, eggs, fish, veggies, etc. &#60;/p&#62;
&#60;p&#62;We don’t eat alfredo sauce often since it has about 10 billion calories in it; but when we do its always from scratch. It seriously takes about 5 minutes to make, it nearly fool-proof and jarred alfredo always tastes super salty and fake-cheesey to me.

<description>&#60;p&#62;I am italian as well, and never ever eat jarred sauce.  Making a sauce is so easy.  Here's a basic, no fail recipe.&#60;/p&#62;
&#60;p&#62;1 medium onion diced&#60;br /&#62;
4 cloves of garlic, sliced or minced (or more!)&#60;br /&#62;
2 cans San Marzano tomatoes (this is key - San Marzano are the best canned tomatoes.  Personally I like the whole peeled tomoatoes because I like a chunky sauce, otherwise you can do crushed tomoatoes - or one of each)&#60;br /&#62;
Fresh basil&#60;/p&#62;
&#60;p&#62;Saute the onions in olive oil until they soften a bit, add the garlic and cook a couple more minutes.  Add your tomatoes, some salt, pepper and oregeno if you so desire and let it simmer.  Add fresh basil near the end of cooking. Typically, this is ready after about 30 minutes of cooking but I if I have the time, I let it simmer for much longer.  &#60;/p&#62;
&#60;p&#62;I usually will buy a big bunch of basil, make a double or triple sauce to freeze, and then make pesto to freeze with the rest of the basil.  If you like a thicker sauce, you can add some tomato paste.  Usually though I can get my sauce to thicken up no problem as the san marzano tomatoes are thicker in general.

&#60;p&#62;I blanch tomatoes and peel their skins off (I leave the seeds because they contain a lot of the flavor).  Then I brown some onions and mix the onions and tomatoes until they cook down for a while.  During the cook down, I add a generous helping of red wine, I add a couple of cloves of garlic, several shakes of oregano and a lot of sweet basil.  I also add some fresh grated Parmesan.  I sample the sauce and add enough sugar to balance out the acid.  Once I hit all the right notes, I add a few shakes of crushed red peppers.  I then simmer the whole concoction for a couple hours on very low heat until it thickens well.  If I'm doing a meat sauce, I add meatballs and sweet italian sausage very early in the process.  It turns into a really nice gravy!
