<description>&#60;p&#62;I rarely marinade pork. Sometimes i'll brine the chops for an hour before cooking, but i find that some kosher salt and pepper is all it needs.&#60;/p&#62;
&#60;p&#62;I'll usually marinade chicken, and sometimes beef with the exception of steaks.

<description>&#60;p&#62;I normally will marinade chicken and beef. Pork is fine without though, I think. We rarely skip maridane on chicken or beef unless it's being cooked in something else! Casseroles, etc.

&#60;p&#62;However my quick trick (for pork especially) if i can't marinate is to slice it and dredge it in something, then pan fry it just until it's really crispy, then throw it in the oven for 30 minutes. It ends up very, very juicy and tender. Basically, what yoursilverlining said. It's such a winning combo.

&#60;p&#62;Add a little salt, then put in a hot cast iron skillet – put a smaller heavy skillet/pot on top of the chops weighing them down, then bake for about 7 minutes per side in a 475 oven. Comes out crispy on both sides, super juicy in the middle.
