We have mandatory composting in my city, so we've got a bucket for food scraps that gets dumped into the big compost collection bin as necessary. I use the disposal for things that don't get eaten and go bad in the fridge and just seem too yucky for the compost bin, and there are always some bits and pieces that sneak down the drain while I'm doing food prep or washing dishes. I grew up with one so I used to use it all the time.. but Wagon Sr. didn't grow up with one and he's always paranoid about it breaking or getting clogged.
