@Cherrybee: Hey cherrybee, I didn't see this post when it first came up but I wanted to show you this thing I use...

http://www.ebay.com/itm/Japanese-Gyoza-Dumpling-Pot-Stickers-Mold-Shaper-GP-01-/360565348657

Makes them perfect every time! I got mine at an intl. foods place in Atlanta for like, 2 dollars.

Not as nice as the homemade pleats, but it does in a pinch.

@.twist.: They were time consuming - making the pastry, chopping the ingredients, mixing, stuffing, browning then steaming - but it wasn't difficult at all!

@spaniellove: Thank you!! I was very glad of your tutorial - the recipe I was going to use just said to squeeze the wrappers at the edges, yours showed how to pleat them and they looked great:

@septca: Is it easy to make your own wrappers? Could someone who is a TERRIBLE pastry cook manage it, do you think? When I make pies, I always use store bought ready-to-roll pastry....! Do you think I could do it?!

I think they are better if you make your own wrappers, but the store-bought ones are really fine. I like to do ground pork, cabbage, fresh ginger, a bit if garlic - I mince it all really finely in the food processor and then fill the skins. Once you fill the wrappers, you can freeze them (lay on a cookie sheet until frozen then move to a bag or Tupperware) - makes it worth making your own wrappers if you know you'll have them in your freezer ready to cook whenever you want them!

@spaniellove: Brilliant, thank you. I will go into town and see what they've got. I will have to use my spring roll wrappers another day!!

@Cherrybee: I'm sure you'll find them there! They come in a paler white and a slightly darker color and all I know is one is thicker than the other for frying vs steaming. Or at least that's what I was told growing up, but I can never remember which is which! It never seemed to make much of a difference!

@spaniellove: Brilliant, thank you! That's a much better tutorial than the one I have been looking at, that will really help! I can't find gyoza skins or wonton wrappers in any of our big supermarkets (spring roll wrappers are the best you can get here) but a specialist Chinese supermarket has just opened in our city centre so I wonder if I can get wonton wrappers there....I might take a trip into town and have a look!

I make mandu, which is pretty much the same. You don't have to make your own wrappers but if you can find the right ones it'll taste a lot better! The wrappers should be round, not square. There's a tutorial here:

Any advice? How do you make yours?

I'm going to try my hand at them tomorrow. I want to fill mine with pork mince and cabbage..... I'm a bit nervous as I've never done anything like that before!

Also - I have some spring roll wrappers in the freezer, can I use those for skins? Or should I make my own? I'm terrible at making pastry type things!!

Thank you.
