This is the recipe that I use. However, I use almond butter instead and I don't add in the brown sugar, since DH is dieting.

I prefer the bring it to a boil in a pot and leave it overnight in the fridge method.

@MaryM: I don't like instant oatmeal so I would definitely like this then. DH is the harder one around these parts. ;)

@autumnlove: Oh that could work just great for our purposes, too! I think I'll play around and see what works best!

@junebugmama: I might try a cinnamon apple one, as well. I normally make a soaked, baked apple cinnamon oatmeal for breakfasts for us on Wed/Thurs but am getting tired of the baked texture. I like the consistency of regular oatmeal better.

Yep, I make it once per week for DH and enough to cover him for 3 breakfasts. I do make a cinnamon apple one though, so it probably helps to keep it wet. I cook it on low for 8 hours.

Not crockpot but I boil water, add steel cut oats and turn it off and it is perfect the next day!

It's thicker than instant oatmeal, but that's why I prefer it. You can always stir in more milk or applesauce to thin it a little.

The leftovers really firm up so I tend to add some water before I reheat them (I make a crockpot of them for myself to eat over the course of a week)

@MaryM: Thanks for the input. The double boiler method looks like it could solve all my worries! :)

@littlebug: Ooooh interesting! I'm wondering if it was just the particular recipe you used or if that's the case with all slow cooked oats. I doubt I would like it either if it were super thick!

I tried it once and didn't like the way it turned out - it was SUPER thick.

I've made this one, and her apple version (there are variations toward the bottom of the post) http://www.theyummylife.com/Slow_Cooker_Pumpkin_Pie_Oatmeal

Her double boiler method makes it pretty fool proof burn/sticking wise.

I prefer her apple version and haven't double boiled it, and it usually only takes 4-5 hours to cook. Double boiling extends the cook time a little, and also make sure you cook it on low if you leave it overnight.

And if you have, has it been burnt or turned out? I am thinking about making steel cut oats in the crock for DH for breakfast tomorrow (he leaves super early) but don't want to risk it if it's just going to be a waste! Reviews online for various recipes are super mixed! TIA! :)
