You've just got to make sure that the dough is &#34;soft&#34; - it's hard to describe but just keep the texture of good gnocchi in mind when you're making the dough. If its super thick feeling when you knead it (or you need it too much), like bread dough it will become heavy and thick and not what you're looking for. You want the dough to feel sort of sort and lightish. If that makes any sense  :silly:  you'll know if after you make it a time or two!

Handmade pasta is probably my favorite thing to order when we go out...it's just so much better than packaged.  But I have had handmade pasta that isn't good so I'm sure it matters what recipe and technique is being used

<description>&#60;p&#62;Yes and &#34;eh.&#34; We can get some fairly decent, inexpensive dried pasta. It's a lot of work, and other than ravioli/tortellini or gnocchi I don't really find it to be worth it. It's fun to do on occasion, though.
