@looch: yes! cauliflower mash is delicious!! Just cut your cauliflower into bite-size florets, steam them and mash them with whatever ingredients you use for mashed potatoes. You won't even notice it's cauliflower!

If you want to make cauliflower rice, you can run it in your food processor until they're small, rice-sized pieces, then put it in the microwave for 3-5 minutes with a bit of water until tender.

@locavore_mama: we're very not picky about our mac and cheese so it's hard to pick a favorite, but I tried this one before and liked it a lot http://www.themom100.com/the-mom-100-blog/recipes/macaroni-and-cheese/

I freeze all types of things, lots of casseroles, i think they freeze the best (along with the obvious soup.) I also freeze veggies for soup if we have leftovers.

I've heard you can rice cauliflower, and somehow it comes out like potatoes, but no idea.

@locavore_mama: Did you use potatoes on the shepherd's pie? I can't seem to get potatoes to defrost and then cook well, they always turn out grainy and watery. Any tricks?

@cmomma17: haha our double are probably most people's quadruple! Tonight I made a big casserole pan of shepherd's pie. Probably 8x14? Between the three of us and baby there were no leftovers. @sarbear: I need your spinach and ricotta stuffed shells recipe!

We've been trying to get into the habit of making double batches of meals on the weekends. Inspired by a fellow mom! ;)

So far we have done turkey burgers, meatballs and sauce and Turkey shepherd's pie.

What meals in your experience are no more work to make a double batch and freezes well?

P. S. Soup and chili are obvious. ;)
