@Truth Bombs: I am so trying to convince my mother to do a beef tenderloin! She's stuck on a rib roast.

I love the smithfield style hams they have at Costco. They just need to be gently warmed in the oven and you don't even need the glaze they package with it.

@Foodnerd81: cut the carrots small enough so they roast at the same time, but yes put them together in the oven with the sprouts. Drizzle a little olive oil & sprinkle steak seasoning on top (not too much or it will get salty).

@Mrs. Tiger: Costco has a smoked turkey breast that we love serving for other holidays if we need a fast entree (i.e. if I don't feel like roasting a turkey). I would say one of them serves 6-8 people easily. You just have to heat it up and its perfectly seasoned and it tastes great in sandwiches and on top of salads, unlike dried out turkey.

@ms.line: Thanks! I think our Easter dinner is just gonna be me, DH, and DS so I was thinking about small, easy Easter dinners anyway. DH's family always did big holiday dinners with all the trimmings so I've had to figure out ways to downscale holiday meals for him. I mentioned a ham steak for next week to DH earlier and he got all Homer Simpson and was like "droooool....ham steak.....can we have pineapple on it!?"

@gingerbebe: SIL offered to being dessert so that's set!

I think I'm going to try ham in the slow cooker. I'll find the smallest I can and just deal with the leftovers. I definitely want the bone though because it makes the best soup.

@ShootingStar: you know we did catering from whole foods for Christmas and it was still a pain. First we almost forgot to go get it (we had a 5 day old at the time...) then everything had to be reheated and even that took a while. And I wasn't doing anything because I was pretty much nursing 24/7 so DH and mil were doing it but somehow just made everything so complicated. So I'm in charge this time. Also we don't have a wegmans nearby but I assume whole foods catering is pretty much the same.

You can buy ham steaks at Costco. They are thicker cut than a spiral sliced ham, but one ham steak could serve 3-4 people easy and then you'd have 2 more left for other stuff, but they'd be individually packed and easy to freeze forever. Or you can cook 2 steaks and have one to cut up and send with your in-laws as leftovers with other bits of the meal Brown sugar glaze, broil or fry for a few minutes, easy peasy.

http://www.mominthecity.com/simple-grilled-ham-steak-with-brown-sugar-glaze/

DH likes his ham with mashed something (potato, sweet potato, etc) which you can buy pre made in the tub, butter flake rolls (buy), and a bagged salad you can dress up easily like Craisins and feta with a tangy vinaigrette. If you want something extra, some pan sautéed or roasted asparagus in just some salt and pepper and olive oil would be good.

Dessert you can obviously buy. I like buying a bakery poundcake and serving slices topped with vanilla ice cream and berries sweetened with a little sugar, and hot fudge sauce if you are so inclined!
