I made raspberry cheesecake pie on Saturday and it was easy and SO GOOD.
Those cupcakes are fun and adorable (Bakerella.com has some cute ones too), and you could always use coloured icing instead of coconut!

Pig cake (silly name but SERIOUSLY a huge hit any time I've ever brought I!)

@smurfette, haha, here i was trying to be all "bring a unique dessert!"

Honestly, i've had lots of gooey butter cake from the "famous" places, and there's just nothing like the one you make yourself with the box cake mix. I even tried it 100% from scratch once. Nope. Variations I've had that are good are blueberry and lemon. Chocolate is too rich for me...Good ole yellow is good.

@yoursilverlining, baklava. DROOL. One of my favorites

My mom is bringing dessert, she's making lemon meringue pie and chocolate cupcakes. She's making "birds nests" out coconut so people can remove the nest if they don't like coconut, and then putting a couple pretty candy eggs into the "nest".

Our Easter dessert usual suspects are: red velvet cake in the shape of a bunny, baklava and baklava cheesecake, lemon cheesecake. Sometimes profiteroles and homemade ice cream.

@blackbird: My family LOVES gooey butter cake. When anyone goes to St Louis or distant family comes to visit, they always bring like 3 from some bakery up there. That looks easy enough!
@looch: That is an idea! My nephews would love them.

Angel food cake, fruit salad with lavendar syrup, marble brownies?

eta: I am doing those cupcakes too, but instead of the dyed coconut, I am just going to dye the frosting green and use a pastry bag with a star tip to pipe it on.

Carrot cake gooey butter cake? I'm making some Fri so I can let you know how it tastes.

But generally gooey butter cake is a huge hit (it's regional here) and stupid easy: http://allrecipes.com/Recipe/Gooey-Butter-Cake-III/Detail.aspx?event8=1&prop24=SR_Title&e11=gooey%20butter%20cake&e8=Quick%20Search&event10=1&e7=Recipe&soid=sr_results_p1i5

It is best if you make it the night before (and you don't want to cut into it hot). It's my top go-to "i need a fast dessert" recipe.

pound cake and berries?!?!?!

I have to bring dessert. Will be about 21 people this year (3 kids, R and 5 and 3 yr old).

Any ideas for something semi easy? I was going to do the cupcakes Mrs High Heels blogged about but most of us don't like coconut. I don't mind making two things.
