&#60;p&#62;IMO, you don't have to have a big meat on Christmas (especially with only 5 people). We choose to focus on dessert ;)

<description>&#60;p&#62;If you roast a chicken or a roast, you can include onion, sweet potato, regular potato, carrots, etc., in the bottom of the roasting pan, then you don't have to make those as sides.  You could do roasted Brussels  or asparagus, just oil them and put them in right after the roast it out but before dinner, say 25 minutes on high heat.  Sprinkle some nuts, goat cheese, and/or cranberries on top. Heat up rolls in the toaster oven if you have it or while the veggies are roasting. Green salad or fruit salad you can make ahead and dress right before dinner. And buy dessert!  You may want to make one more side, like a casserole. I say make the day before and put in the oven with the roast.  &#60;/p&#62;
&#60;p&#62;So, day before make salad, side&#60;br /&#62;
Day of, cut veg and put on roast of choice&#60;/p&#62;
&#60;p&#62;1 hr before roast is done, put in casserole&#60;br /&#62;
Once casserole is done, switch out and put rolls in&#60;br /&#62;
Once roast is done, crank up the heat in the oven and put on the Brussels or asparagus.
