http://www.marthastewart.com/336014/herb-crusted-salmon-with-roasted-lemons

This looks super fancy but it's easy! Takes 20 minutes. Don't bother trying to pry the fillet off the skin, just use two spatulas and transfer the whole thing onto a long oval plate with some lightly dressed greens and lemon wedges for a pretty presentation. You can remove the skin when you serve the portions at the table. Tuck the thin skinny end under itself so it's uniformly thick throughout.

I make some sautéed mixed veggies like tiny squash, cherry tomatoes, peppers, and onions with olive oil, garlic powder, and salt and pepper. Easy starch would be quinoa or couscous cooked in seasoned chicken broth with thyme, salt, and pepper.

I served this menu twice in one week for two dinner parties. I got those big packs of salmon from Costco with the two big fillets. The veggies and starch can be done ahead of time and reheated too. Throw a glass of Chardonnay and a bakery dessert and you're done!

I recently made pork loin with chopped onions, canned cramberry sauce and french dressing in the crock pot for visitors. Served with white rice. They loved it! I prefer to keep it simple when we have guests so i'm not slaving away cooking the whole time they're there.

@yoursilverlining: I was just going to suggest a roast chicken with veggies

You could do it in a crock pot!

@lady grey: Cook a beef roast in the crockpot with some water and a packet of french onion soup mix. Shred and serve on lightly toasted french bread with au ju. Voila! French dips.

Serve with spinach salad that has balsamic dreasinh, strawberries, slivered almonds and cheese (feta, goat cheese, or asiago, etc. )

I really like this recipe, it's really quick and easy. If I'm in a rush, I don't pound out the chicken, I just put everything on top of it. I also had a premade balsamic glaze and drizzle it over top. Really yummy!

@lady grey: Could you cheat and pick something up from the grocery store? Ours always has stuffed pinwheel steaks already tied up and ready to go!

I would just get what the butcher recommended for a recipe like this: http://www.jamieoliver.com/recipes/beef-recipes/perfect-roast-beef/#kAjSYYjT7WJdrqeL.97 and then stick a meat thermometer in and call it a day! If you ask the butcher nicely, they'll usually truss it up for you so you don't have to do anything but put it in the oven!

Maybe i just want to make a beef roast and use my new oven thermometer.... :silly:

@blackbird: @looch: I like the roast and steak ideas, but I am not very confident cooking bigs hunks of meat unless its in the crockpot. Any go-to recipes? What do you stuff flank steak with?

@yoursilverlining: risotto! good idea

@Chillybear: salmon would be great, although I know my dad cooks it once a week for him and my mom (he is the cook in the household) so I'll have to make sure he didn't just have it the night before or something!

Baked Salmon?
make a bed of lemon slices on a large piece of foil, put salmon filets on top, season with pats of butter, minced garlic, salt and pepper. Enclose in foil bake for 30-40 min at 400*

@looch: Roast chicken was going to be my suggestion too.

Risotto is actually pretty easy and impressive to many people. "Dressed up" salad.

What about a large Caesar salad topped with grilled chicken or grilled jumbo shrimp? Homemade dressing is easy to make.

If it were me, I would do a stuffed flank steak, it wows people for some reason, and I've made it so many times, I can do it without any added stress.

My other suggestion is a roasted chicken, but carving it prettily isn't my strong suit.

My dad and his business partner are coming over for dinner this Thursday. Need help figuring out what to serve them! They will have dinner with us and then head straight to the airport, so don't want to do anything too heavy. Want to cook something simple, not too time consuming but not too casual (like tacos) either.

Also no tomatoes or spicy stuff. Help!
