<description>&#60;p&#62;@irene:  It's not really like a meatloaf. The squash gives it a pasta texture. I'd say it's more like a quiche with the eggs. But depending on the meat you use, it can be super low-calorie. It also refrigerates well. I've never frozen it.&#60;/p&#62;
&#60;p&#62;I make mine with pepperoni. You can also cut down on the amount of sausage you use. I always cut the amount in half when I cook her recipes. When I make it with pep, it's about 200 calories per serving. I would probably make it with a veg on the side too. &#60;/p&#62;
&#60;p&#62;For other ideas, I love baked sweet potatoes. If I want a baked potato, I just use a smaller potato. Big russet potatoes are common for baking, but I prefer the smaller ones or I roast smaller red/Yukon Gold potatoes. Beans are also a good meat substitute in recipes.

<description>&#60;p&#62;@Happygal:   Haha! Thank you for noticing! I am actually looking for LOW CALORIE recipes but I don't mind low carb too (typo on the title!) In fact I do prefer low carb anyway because I no longer cook noodles / pasta dishes as I am watching my diet...! If I bake potatoes I'd just have to resist my urge to eat them and give them all to my husband and DS... !&#60;/p&#62;
&#60;p&#62;@bluerose:  Oooo.... I want to try too! @avivoca:  Is it more like a meatloaf when it is done baking? And does it refrigerate / freeze well? Funny I honestly had no idea what spagetti squash is until right now! It does look and sound like it is something I'd rather do on the weekend and serve on the weekdays.... it is quite time consuming and troublesome to make for a fast weeknight dinner lol. What do you eat it with, a veggie? Does it already taste like lasagna and I don't have to make a carb/grain (pasta or brown rice) for the rest of my family? I am also curious about the calories @ serving! With all that sausage and sauce it worries me.&#60;/p&#62;

&#60;p&#62;I was having this discussion with my mom yesterday, that what works best for me is to have something that is oven ready on weeknights.  I can't be bothered to saute something in a pan, so all of the meals I make are basically things that I can bake off in the oven.&#60;/p&#62;
&#60;p&#62;No one's mentioned pork, but I find a pork tenderloin, cut into medallions is a really easy weeknight meal that can be assembled ahead and baked in 25 minutes or so.

<description>&#60;p&#62;I bake a lot of things, especially fish. Just wrap it up in foil with a little seasoning, or not, throw it in the oven for 15-20 minutes and it's done.&#60;/p&#62;
&#60;p&#62;A delicious and highly nutritious oven side is roasted tomatoes. You can use any kind, but I like cherry or grape tomatoes. I usually cut them in half, drizzle them with olive oil and a little S&#38;amp;P and bake them for at least 45 minutes. They pair nicely with tons of meals and they are almost reminiscent of ketchup.

<description>&#60;p&#62;@irene:  Yes, you can use fresh green beans, I just use the frozen ones because they are convenient.  The pork isn't spicy per se, but between the Dijon and black pepper in the Montreal Seasoning, it could be a little strong for littles.  I've made this with honey mustard, brown mustard, and just plain yellow mustard too, and it turns out great.  You can just swap out the Montreal seasoning with other all purpose seasonings, like seasoned salt, lemon pepper, garlic salt, or just S&#38;amp;P and your favorite dry herbs.  You only need like 2 tablespoons of mustard - its just to give it a little tang and to help the dry herbs adhere to the outside of the meat.  I don't think you'd need more than a generous sprinkle of seasoning on the outside.

&#60;p&#62;@BeachMama:  My worry is wouldn't the sausage have a lot of extra fat, salt, calories...etc. being processed meat? Other than that it sounds so yummy!!!&#60;/p&#62;
&#60;p&#62;@starlitsky:  It is yummy - just make sure you don't pack in too much oat flour, and let it cool down before you eat it. It crumbles when it first came out of the oven and it worried me but after it cool down it is awesome! &#60;/p&#62;
&#60;p&#62;@hellobeeboston:  Do you have a link to a recipe you have tried? I need to seek that out - it sounds so good! My problem is my picky little DS doesn't eat a lot of those &#34;root vegetables&#34; that holds up well when roasting: potatoes, sweet potatoes, cauliflower, asparagus, zucchini, bell peppers...etc. Hmm. I guess i need to slowly and consistently &#34;expose&#34; him to it. IT is just such a pain i have to make him a noodle or mac and cheese on top of what I am roasting because he doesn't eat potatoes and the likes! He eats other veggies like broccoli, carrots, corn, salad...etc. OK.&#60;/p&#62;

&#60;p&#62;Oven roasted pork tenderloin is Delish. Marinate loins in ginger, garlic, soy sauce, salt &#38;amp; pepper and a bit of evoo. Yum. &#60;/p&#62;
&#60;p&#62;Oven roasted cauliflower is delusions too, it's better after roasting!! Cooking spray and s &#38;amp; p and that's it. &#60;/p&#62;
&#60;p&#62;Gwenyth Paltrow has a great recipe for roasting chickpeas, cauliflower and I think I added potatoes with a light mustard sauce, if that sounds good to you I will look for recipe and post.

<description>&#60;p&#62;1. I get a bag of frozen green beans (I love the thin long French green beans at Trader Joe's) and toss them with garlic powder, salt and pepper, and a little olive oil.  I throw them on a baking sheet and then top with a pork tenderloin (the long and skinny ones, not the big fat loins) that I slather with Dijon mustard and some all-purpose seasoning, like Montreal Seasoning, and maybe some thyme or rosemary.  I put it in the oven for 30-40 minutes at 400F.  The juices from the pork goes into the green beans and its really yummy.  I pull it out and let it cool for a few minutes on top of the stove, then I slice it up and serve it with the green beans.  Sometimes I like to slice up a sweet potato into coins or half-moons, toss them with coconut oil, and roast them at the same time.&#60;/p&#62;

You can swap the spices with Italian seasoning or curry powder or pesto.  You can swap the veggies with asparagus or use chicken chunks instead of shrimp. &#60;p&#62;3. Toss peppers and onions and strips of chicken or steak in a little taco seasoning and lime juice and broil under the broiler until the meat is cooked through.  Slap on some corn tortillas and a side of beans and easy fajitas.

<description>&#60;p&#62;I am watching my diet and have been doing well in morning and lunch, but dinner is what's really tricky.&#60;/p&#62;
&#60;p&#62;Husband had been cooking in the past, but the way he cooks I am pretty sure it is packed with fat and calories, and since LO (now 4) started eating grown up food I want to wean him off of me having to cook separate for him and just cook for the family as a whole. I have been doing a lot of baked chicken wings + brown rice + a veggie and salad, but I want a collection of recipes!&#60;/p&#62;
&#60;p&#62;I like baking with my oven, it is simple and delicious. I made a very simple roasted cod with potatoes tonight and I steamed green beans on the side, but the roasted cod and potatoes, although extremely delicious, ended up to be quite greasy (even though it is all olive oil, it is still a lot of calories). Tomorrow I am going to make baked salmon with glass noodles and steamed beans. &#60;/p&#62;
&#60;p&#62;I want something very easy and delicious and low carb yet super nutritious. What is your go to oven baked dinner recipes? I know many people sworn by crock pot but I just never liked it. Suggestions please :-) !!&#60;/p&#62;
&#60;p&#62;In fact, any low carb oven recipes welcomed .... I was looking for morning muffins and cookie recipes too. I made an oat flour chocolate chip cookie over the weekend for 130 cal @ cookie. Just a bummer that sometimes LO isn't behaving and he doesn't get a cookie and I ended up eating a ton of those. Yikes.
