Usually some type of sandwich, rice with soup, or leftovers with cut fruit. Chicken nuggets are also quick and easy.

hummus quesadillas (hummus instead of cheese and then toasted)
leftovers
eggs
lots of veggies and fruits and some sort of lunch meat.

My son can't have dairy so no cheese for him. We also try to avoid grains.

Some of DD's favorites are:

pb & j
veggie quesadilla
rice or pasta with steamed veggies
soup
fruit/veggie/meat/cheese tray (she loves this, and sometimes I do themed trays - mediterranean: olives, feta, mozzarella, salami slices, cucumber slices, tomato slices, hummus and pita bread slices; mexican - black beans, tortilla chips and fresh salsa, rice, avocado slices, and cheddar cheese slices; "lunchable" - sliced deli meat, sliced apples, cuties, whole wheat crackers, and sliced cheeses; etc...)
