Wild Garden hummus is shelf stable and tasty. I would bring veggies or pita/crackers to dip. Tabbouleh is a nice hardy salad that I often add chickpeas and chopped cooked chicken and feta to. Nice all in one meal. Tortellini pasta salad is another - mixed with cherry tomatoes, chunks of cheese and ham, olives, and pesto or Italian dressing. Apple slices and pretzels in Nutella or PB dip (whip peanut butter, cream cheese, powdered sugar, and vanilla together - add Cool Whip or marshmallow fluff if you like it fluffier). Sandwiches made on tortillas glued with mustard or hummus stay together nicely and you don't have to worry about squish. Cold quesadillas.

@looch: that looks delicious!

@LuLu Mom: great idea! I was leaning toward bento type boxes, with a few, easy small tweaks for each person.

For picnics I usually buy a Rotisserie chicken and shred it and make a pasta salad and combine it and cut up some fruit. Otherwise I'll make sandwiches ahead of time or "lunchables" aka make our own cheese/meat/cracker kits for the kids. I usually throw in more snacks like pouch applesauce and yogurt for them as well. I like things I can pull out of bag and put onto plate and eat immediately so it's quick and only ever need a fork.

Our family (DH, DD 2 yrs and myself) love hiking, biking and picnicking on the weekends.

What are your best picnic food ideas? Preferable no prep needed at mealtime, all prepped beforehand.

I bought a big sectioned tray that I think would be good for fruit, salami, cheese, etc. Need more creative ideas!
